What's on your (last) Monday (in August) menu?
actually, the original recipe was a lemon-blueberry pie from Weigh****chers (I think Liz was the first to post it). I've been playing around with it for a couple of years. The original recipe is:
3 eggs
3 C nonfat plain Greek yogurt
1 package of sugar free lemon Jello pudding
3 T artificial sweetener
rind and juice of one lemon
4 oz blueberries (I usually throw in more than this - more like a cup)
Preheat oven to 350. Mix all the above together. Spray a pie pan with cooking spray and pour the mixture in. Bake for 40 minutes or until done. Chill for several hours or overnight.
I often add 2-3 scoops of unflavored or vanilla protein powder to bump up the protein (might have to add a little more yogurt or some liquid (like unsweetened almond milk) if you do this). I also usually use lowfat yogurt because the pie turns out a bit creamier. It only adds about 10 calories to a one piece of the pie, so it's worth it to me. Plus, I don't really care about the points since I"m not on WW.
for the cheesecake one, it's:
3 eggs
3 C plain Greek yogurt
1 T vanilla
3 T artificial sweetener
1 package cheesecake-flavored SF Jello (sometimes I'll add 1.5 packages to make it taste more cheesecake-y. If you do this, you may not need the artificial sweetener - just taste it and see...)
everything else is the same (and I usually add 2-3 scoops of protein powder to this one as well)
I've played around with some other flavors, but I think these two are the best. Liz bakes strawberry slices into the cheesecake version. I make it as above, but I make berry compotes by cooking down fresh or frozen berries with artificial sweetener, vanilla, and cinnamon - (great on yogurt and chaffles, too) - so I just spoon some of that over it.

I've started hoping for snow to deal with the smoke. There isn't any in the forecast but last year our first snow was 9/7 so maybe next week!

I'm sure the 1440 mile distance will keep it here. If you've been living under the smoke for two months, you'd be hoping for anything to take care of it. You wouldn't have been able to run outside since early June!

Yikes that is crazy. Best part of vacation was being outside so much. I hate being in the house or in the office. I love the great outdoors. Not a camper thought I need a hotel to sleep.
