What's on your Tuesday Menu?

Helllllooo from vacation land (well... a sort of boring staycation)! Not complaining, it's been fun to build this craft room and I hope to get enough done today to really be able to use it tomorrow... but I am hesitant to believe it will actually come together in time. It's a lot more work than I thought! But at least I was pretty good about staying off of work email today :)

Ok my accountability was not perfect at all. No "bad for you food" but I didn't follow my plan and so macros were off. I find it really hard to hold to a menu plan on days off--I don't actually think that I ate anything I planned. Anyway, I ended the day just over 1000K calories. I did make myself do the iFit challenge that is the walk to the Everest Base Camp. My hip and knee arthritis was screaming which is why I have been bad about exercise lately... but I pushed through it and it felt good to do something so I will keep going with it. It's an 18 part series. Day 2 today.
I will really really really try to be better about following my menu today!

Good mornin JB and menu friends!
Yesterday sucked pain wise and so far this morning. It's just getting so so exhausting.
No huge plans for the day. My mom will likely want to go to the thrift store. I made gazpacho again yesterday and it just so good when it's hot outside.
Food yesterday was better than it's been in a long time. Still room for improvement but so much better.

Good Morning!
I haven't heard back from that interview I did last week - I'm going to assume I wasn't the selected candidate. I'm really indifferent feeling about it right now.. so that's ok. I have another interview tomorrow doing exactly what I do now, at a different hospital.. we shall see!
QOTD: foxes for sure - they're so majestic.
