What's on your Wednesday Menu?

Super easy! Chicken breasts, plus juice of three or four lemons, plus a packet of Italian dressing seasoning and a stick of butter. One hour on high in the slow cooker, reduce to low for 5-6 hours. Then just scoop the chicken out and shred it. Super tender, super juicy, super easy.

i prefer chicken breasts but I know a lot of people like thighs because they are less dry, it would work with any cut you choose.

Good mornin JB and menu friends!

Not much in the works for today. We have the kids till about 4 or 5. First week of summer vacation for them. I look for there to be many fights! Ha. The middle one, Riley, is quite the drama queen and has frequent melt downs over weird things. She is kind of shown favoritism by a certain parent... so it's interesting to say the least. Never dull...LOL

I'm not feeling particularly well. Just icky. My appointment with my psychologist yesterday went well. I cried of course but I have more of a plan moving forward. Going to start journaling again.

QOTD: hmmm...that's a hard one. I'd say my first choice would be DC. So much you can see in way of museums. A very close second would be West Yellowstone, Montana. Right after the busy season. So beautiful!

L: low carb tortilla, 1 slice turkey lunch meat, blue cheese and honey mustard

Whoa, I can't believe school is out already for the kids where you are. We have another month to go and we are dragging to the finish line! Hope you guys have a fun day.

I can't believe that school is not out for my Junior. It feels endless, this year. My college freshman's seemed to fly by.

Popcorn!!! So your tiny tummy allows it? I know popcorn can be rough on the belly. That is the one 'splurge' I hope I can have in the future. Just a little. I used to air pop white tender. Yum!

Unfortunately, we can fit appalling amounts of popcorn in our pouches.

I usually air pop mine and yes...not much is eaten. Usually around a cup or two at most. I need to quit eating it though. It's a slider food for me.

Unfortunately I have always loved popcorn. But since December when I started this journey I knew it would only be a rare treat so I only had it a couple of times before my surgery over the last 6 months. When I can eat it again it will still be a rare treat :) With everything being closed this past year, and now movie theatres are opening back up I am looking forward to a good movie and some popcorn in the future ;) But first I have a lot of weight to lose!!!
