What's on your Monday menu?
Besides the empty calories, it also makes a mess.

A little late, but I finally got to see the mermaid cheesecake on my full computer screen and it was amazing. My phone screen wasn't doing it justice.

Mernin' errybody!
QOTD - I'm working on testing some dev stuff at work for an application that I'm the SME on, and it's not even my job. BUT, because I'm really trying hard to work my way into the job, I'm helping the team out. So, that's my goal. Find some defects.
Breakfast - fasting, so hot black coffee and water
Lunch - Somewhere out, but definitely sticking to veggies/grains. Didn't plan well today, as I overslept.
Snack - brought some strawberries, red grapes and a "this saves lives" dark chocolate/peanut butter vegan bar
Dinner - taco Monday! All the fixin's (mine vegan) on corn.
I hope you all have a great day!
Christina

Good morning! Late post for me. I got up and started puttering around the kitchen and time went by in a flash. We are taking the RV out to the local campground Wednesday, so I'm prepping today. Clothes for work and play pretty much lined up. Vitamins are all set up. I just cleaned out the fridge, prepped leftovers for lunches (and a couple breakfasts) and then finally I am sitting down for coffee and catching up. Need to finishing figuring out a menu for the week as grocery shopping is up next this morning. Need sprinkles for the grand girls "S'mores Cones". We make them in sugar cones, I let the girls pick from a variety of treats...we stuff the bottom and the top with mini marshmallows to catch all the good stuff we put in between, then I wrap them in foil and toast them all up on the fire. Ta dah! S'mores without all the mess. And they get to pick from chocolate pieces, syrup, sometimes mini cookies, sometimes cookie dough, sprinkles, whatever else I can pull out of the pantry in the RV. They love them and the ritual.
QoTD: We must hire at least one new person at work. We've had almost zero responses to our advertisements. I'm making it my mission this week to find applicants and push this process along.
Menu:
B: HB egg and 1/4 c cottage cheese
L: leftover chicken meatballs and roasted veggies
D: trying a new recipe. Sea Bass in a soy, miso, butter glaze. Cauliflower "fried" rice.
Peace Everyone!

I love that idea for S'Mores cones. I remember when I was a kid, we put marshmallows on a fork and held them on the gas burner of the stove when my mother was not at home. Then we made S'Mores. I imagine we got in trouble for that, but don't really remember. I know we did not do it again. All my other memories of S'Mores were on a stick and over a campfire. I am sure they were quite messy.

I started a Couch to 40K iFit program last week which is a lot of fun. My goal is to stick to that and the fasting. I find it easy to increase the fasting window and yesterday stopped eating at 8:00 PM and started eating today at 1:00 PM. My blood sugars have stayed good and have not gone under 80. My energy is great and have no trouble sleeping.
