Tater tot casserole? Sure you're not from Minnesota? That seems to be the state dish over there!

Good morning. Still reeling a bit over here and work has been so slow. So that give me more time to lick my wounds. Need to let that go. Staying on track, actually pretty under track, with food. Calories have been maybe too low this week. My body is wondering what the heck and I'm up two pounds. Not where I want to be right before vacation starts on Saturday. And birthday month begins today.

QoTD: When I was young, I put a Pyrex baking dish on the burner with water to "boil off the remnants of food". Pan exploded all over the kitchen. Learned a life long lesson right there.

Menu:

B: 2 oz left over steak with 1/4 c cottage cheese

L: 1 chicken sausage link with roasted veggies from last night's dinner

D: premade Korean BBQ style chicken that some lady talked my husband into buying at the grocery store and cauliflower stir fried rice

S: whisps/jerky if needed. Piece of chocolate if I behave myself all day.

Peace Everyone!

Good Morning Melody and Menuers,

I love that fox squirrel he is so cute. However it is actually my Friday!!! I am lucky this company was started by a bunch of good Catholic men and we always have Good Friday off. In the past I have had a family gathering at my home and had my cousins. I always made tuna melts and Crab Cakes but with COVID... Wah wah.

QOTD: I do have a few but the most memorable was when I bought my first house. DH and I were refurbishing it before we moved in. After our work day we would go over and work all evening. We finally got a refrigerator and I filled it with frozen pizza so we could grab something quick while we were working. OK born and raised Italian Pizza for me always started with flour water and yeast and never a box. I threw a pizza in the oven and went on painting. Half hour later pulled it out and went to cut it. I could not get the pizza cutter through it. I never realized it was on cardboard. LOL DH and I were dating less than 6 moths he thought OMG what she can't even cook a frozen pizza? ok 20 years later and probably 80 bounds of weight gain on his belly I think he know now I can cook.

Accountability: Scale says bad. I grazed and ate 1 1/2 backed oatmeal muffins.

Accountability: I did good. I only added 1/2 baked oatmeal muffin. And I did get to run last evening. It was 72° and I was able to wear shorts and a tank. I think my skin even got a little pink. It was lovely.

QOTD- I dumped a whole sheet of PB cookies in the bottom of the oven. I forgot to press them down, they were just balls and my Mom was so mad.

I am so happy today I got my first Covid vaccine. It was at the Convention Center and I did a lot of walking and standing in line but it's in my arm. They are doing 8,000 shots a day, up from 4,000. Next one on 4/22. I can't wait!

Work has been crazy and I can't seem to get motivated to get it done. So I come on here and read and look at CNN and anything else to procrastinate. I did get the lawn mowed yesterday since we finally had some sunshine and it was 70 degrees, I was actually in a short sleeved shirt.

The farrier was at the barn when I was there and she fit me in. He got 3 out of 4 trimmed and was being uncooperative so she is going to come back on the 9th. This is the first time I have had a woman, she is really calming and doesn't try to brute strength them into doing what she wants. She is very patient.

I loved the squirrel and hope you feel better soon Melody.

Have a great Friday Eve everyone!

I am so sorry you are going through all of that pain. Sending healing vibes your way. Purring kitties are so relaxing.

When I got married I told my husband I did not know how to cook and he said he did not care. He could just eat in restaurants. After we got back from our honeymoon he said that anybody can cook eggs for breakfast. So I made him some fried eggs with toast. He was not happy because the yolks were broken.

So the next morning I was determined to serve eggs with unbroken yolks. I fried two and the yolks broke. I kept trying and finally got one that the yolk was not broken. Then I managed another one, but I threw away 8 eggs. He was not pleased with the waste, so said he would just eat eggs with broken yolks.

Years later, I told that story to a lady who said, all you have to do is break the egg into a bowl and then put it in the pan. She was right and I never served an egg with a broken yolk after that.

Wow - I can't believe I forgot to post this morning! Too much on my mind, I guess. I'm now sitting here waiting on the vet to call. One of our boys had a complete workup this afternoon (he's been losing weight). Xrays, ultrasound, blood tests. I hope it turns out to be IBD (inflammatory bowel disease). Not a great thing, of course, but probably the best "choice" of the possibilities. Plus we've dealt with that with several of our cats, so we know the drill.

QOTD: a lot. The last few years it's been mostly yogurt failures. The last one was when I was experimenting with making eggnog-flavored yogurt, which DH loves. It's impossible to find after the holidays, and a challenge to find even DURING the holidays. Two or three major flops (luckily, I had the sense to make it into protein shakes (and regular shakes for DH), so it wasn't a complete waste. But then I discovered dehydrated pasteurized egg yolks (a powder that comes in a bag). Ta da! That did it!

accountability has been good the last few days

weird eating today - but then it's often weird (although at least within my calorie range). It's just that you guys just see the plan - not what I actually ate, like you will now (I usually follow my plan for the most part, though - but not today):

B: plain Greek yogurt with apple/cranberry compote, coffee with half & half

MS: strawberry protein shake (with frozen strawberries and "power greens" blended in)

L: Costco chicken skewer on half a pita with hummus, tzatziki, and sliced cucumbers, two things of L&F creme brulee

AS: protein bar, 3 mandarin oranges, and some SF Jello with light Cool Whip

D:?? The plan was teriyaki salmon with a salad, but DH is tied up in Zoom meetings until 7:00, so we're doing our own dinners. I may have another Costco chicken skewer with a salad

ex: did 1/2 hour of a walking video today - so I need to do at least another 15 minutes of cardio tonight. Probably weights, too
