A friend of mine received her second vaccination the other day and she reported a couple of days of headache and fatigue but not too bad.

I have to decide whether to go to Mike's this afternoon or early tomorrow. Depends on weather and mood I guess. The drive is almost 3 hours so it is a bit of a hurdle.

TSS: 4 years, 9 months

B: Coffee!!! Scrambled eggs and cottage cheese

L: tuna salad and cottage cheese

D: healthy choice meal or shrimp (if at my house, otherwise ?)

Good morning menu friends.

Not a lot planned for the day. I got a folding portable cycle yesterday. While it didn't make my back feel better it didn't really make it hurt more either. Since I spend a lot of time sitting thanks to pain I think this might of been a good thing to invest in.

I'm making some gluten and dairy free enchiladas today that I am so darned excited for. The sauce is really the source of my excitement....it is a creamy salsa verde sauce. I'm going to use coconut milk instead of Mexican crema. Chao vegan cheese instead of real cheese. I'm also able to control the heat. The recipe called for serrano peppers but they are too hot for me. I'm going to use part of a fresh jalapeño. So excited! lol

still haven't heard anything about the stimulator stuff. Growing a little frustrated. The NP said they'd call me last Friday. If they don't call today I'll be calling tomorrow. If it sounds like I'm a bit desperate...I am.

b: egg beaters, chicken sausage, gf toast and coffee

l: chicken breast chunks and fresh raw broccoli

d: ENCHILADAS! and riced cauliflower. Might have some avocado for garnish

s: popcorn? Fruit and ???

I will never ever buy salsa verde again. Holy crap! What I made is so so good. I need to make just plain salsa verde for me to have around the house. The enchiladas are fantastic. They would of been really good with real cheese but it was still delicious.

Pati Jinich recipe! I'll make the salsa verde with cumin and lime juice next time!

Mornin' All!

gearing up for a busy day. I have to host a Zoom lecture today for one of my organizations (from 10:00-11:30), then from 11:30-1:00-ish I'm at a speaker luncheon (also on Zoom - but I'm not hosting that one), and then I signed up for some other Zoom lecture from 2:00-3:00 that my financial advisor is hosting. At least this should keep me from snacking most of the day (although I did better yesterday!). I think I'll do a kickboxing livestream class at 6:00 - and maybe something else via youtube earlier to keep myself busy and out of the kitchen (not to mention burning calories is always good!)

down a pound this morning - although I knew that gain yesterday was all water. Now hopefully things will start going somewhere.. (and by somewhere I mean "down").

TSS: 5y7m

B: plain Greek yogurt with cranberry compote, coffee with half & half

MS: protein shake

L: a cup of Indian-spiced kidney bean stew (if there's any left...)

AS: half a cranberry protein muffin, L&F yogurt

D: Thai-style chicken & broccoli curry (no rice)

have a great day, everyone!

Good morning all,

Thanks for starting us off supershopper. Yesterday was a bit crazy at work although I was able to read the posts, it was too late to be posting my menu. Today should be quieter since new lockdown restrictions come into effect. Our business is considered an essential service so I'll still be working from the office but feel very comfortable since we all have separate spaced out offices with doors that can be closed.

B - protein shake

L - turkey burger (no bun) with lettuce and hot mustard

S - greek yogurt

D - turkey chili

S - SF bran muffin
