Good morning menu crew!
Another difficult night pain wise. I don't think it's my bed....just my body. Yay? Lol
I've got to run to the post office. I have to mail the letter from my doctor to the social security office here. I tried calling them yesterday. I waited over 2 hours once and was hung up on. It literally made my blood boil. I was so pissed off...still am. I tried calling both the national and local and was hung up on as well. I'm sending it registered mail.
No other big plans. I kind of want to watch the news today. My cousin is such a numb nut. Has me upset this morning that people can be so totally and willfully ignorant.
qotd: oh yes...I still need to drop 40-50 pounds but I've noticed a difference for sure.

More beans for dinner. Then they'll be gone. Didn't care for these as much as pinto, black or navy beans. They aren't bad but not great. The texture is a little "stiffer" than I'd like.
I am making some enchiladas tomorrow and I'm going to be adapting a recipe to gluten and dairy free. It'll include fresh salsa verde which I am very excited about. Instead of crema I'm going to use coconut milk with the salsa verde to make the enchilada sauce. First time buying tomatillos and cooking with them too. Will be sure to share if it turns out well! They are what I'm wanting for my birthday dinner if they turn out good. I can freeze the leftovers.

Good morning, everybody!
It was good to hear from everybody yesterday. I had super busy work day yesterday, but then today is going to be fairly quiet. DS started school yesterday. They are trying to do 70% in-person classes and 30% virtual. I hope that allows him to start meeting more of the other kids.
Six pull-ups without coming off the bar yesterday. One of my goals for the year is to get to 10. Being a little lighter would certainly help, so I am also trying to put the snack monster into the pantry.
QOTD: It wasn't as much as I thought it would be. When I was in my mid 20's I lost 113 pounds and everybody felt like they had the right to discuss the issue with me. This time, it was much less so. I am not sure whether it was because attitudes have changed or it was because of the position I now hold. There was one guy who I served on a board with who kept asking me how many pounds? I don't know why people feel that they are entitled to know that.

I think people believe that men are more likely to divulge the number of pounds than women. I was willing to tell how many I lost in total, but never what I weighed (at any point).

I never told them how much I lost, either, because I didn't want them calculating in their head what I used to weigh! Now I tell people (when it comes up - which is almost never) that I lost over 100 lbs. It was actually over 200, but I don't think the average person could get their head around that. 100 lbs sounds like a TON to a "normie".

My response when someone would ask how many pounds I lost, I would tell them, not enough!
