Good morning everyone. I hope you all had a great holiday!

mine was crap thanks to health reasons. A new issue with my right eye. I'm trying really really hard to be positive! It's really hard for me. I feel very beaten.

no plans for the day. Just need to eat better today.

Good Morning. I was sorry to read about your eye. I was hoping it wouldn't be a new issue for you to endure. I know it is hard to be positive when life just keeps coming at you like that. I struggle to stay positive too. I need to work on that before the next big year rolls around here. Will you be able to get some rest today? I hope so. If you have no plans for today other than eating better, lay low and take it easy, eh?

I have no meal plan for the day. I mixed in some PP with my morning coffee. I haven't had the energy to do a low-paced hour walk, (I have been able to do about half but I am just worn out all of the time). I hope to catch some good podcasts and maybe get an hour in today, more for mobility and circulation than burning calories.

What exactly is going on with the eye. I had a bleed years ago that the doctors tell me was a form of a stroke in the eye. I had a spot that I thought was a floater but was actually caused by the bleed. I went to the regular eye doctor and they immediately sent me to a specialist.

It started with slight blurriness then the tell tale little spider leg like finger in my sight. As time went on my vision looked gritty or grainy. Unfortunately my doctors office is not taking calls. I'd have to go to the ER then get seen by the specialist on call. With COVID so bad and having to sit for hours on my back...it just will have to wait till Monday.

I unfortunately have experience with these. I had no flashes of light like I used too when these things happen. My blood sugars have been good. I'm really just at my wits end on my health stuff this year. My insurance should stop on the 1st. Ugh.

I hope everything is OK, but you do need someone to take a look at it. I hope you go to the ER and get it checked out. Better safe than sorry.

Mornin' All!

well I told myself that I wasn't going to stress too much about yesterday and just get right back to it today, but...good Lord. I actually did log my calories, and I was close to 2900. I feel like I weigh 600 lbs this morning. Although I remember back when I weighed over 300 lbs, 2900 kcal would have been a normal day. God knows how much I would have taken in on holidays back then. Anyway, back to it. We have half a lasagna left over, and over half of the cranberry/orange cheesecake with the chocolate crust. I discovered late last night, after doing my menu, that if only choose one of those each day (not both!), I can work them into my daily menus and stay within my range. Although I'm more worried about the cheesecake. DH will eat a lot of lasagna and it can be frozen, too - but not the cheesecake. I may have the mothers back over here for din-din tomorrow night - or we can do take out and cheesecake at one of their apartments. Not sure how else to get rid of this thing. It's so rich that one can't really eat more than a sliver, so it'll take awhile...

it's wonderfully sunny out today, but cold. Still, we'll get out one way or another. At minimum, we need to buy some cat food. I'll also do some cardio in my basement to work off some of this guilt. Other than that...???

hope you all have a nice day. I put in a picture of the cheesecake after we were done with it. It looked prettier before we cut into it, but you get the idea.

AS: Fit Frappe (it's almost 10:00 and I haven't eaten yet, so switching this normal MS to the afternoon)

D: turkey slices, sweet potato, sliver of cheesecake, I think....)

If I lived close, I would gladly take that cheesecake off your hands and assure you none of it would go to waste. Is there a recipe you can share?

yep - here you go! I doubled the amount of orange peel in the filling part because with the original 2 t, I couldn't really taste the orange. I also threw in some extra cranberries since I had some left after measuring out the 2 C (and had no other plans for them) - and added some extra sugar to compensate for the extra cranberries. Other than that, I followed the recipe exactly.

I am going to do this for Valentine's Day. My first thought is to use orange juice in place of the water in the topping. Will let you know how it comes out. I know that I have a springform pan, but have never baked a cheesecake in water. I have always made the no bake ones.

I'm always afraid to bake them in water, but they've always come out fine. I think they're creamier or something - plus they're less likely to crack (although with cheesecakes with toppings like this, I don't really care if they crack since no one can see the crack when there's some kind of topping globbed on the top).
