Good morning! I slept last night...ahhhh, I feel so much better about my world today! Not much on the agenda today. Just work and then I am working on a project on the Cricut I hope to complete more of tonight. There is just nothing intuitive about the process for me, but I keep plugging away!
I've just found out that for the first time in 39 years, I will not have any children with me on Christmas day. I'm struggling with it, but understand that my little family is growing and building their own traditions. I've hit on a plan to create a completely homemade dinner for my Dad and husband that uses recipes I haven't used yet. And I am testing the recipes out in the weeks to come so it's not a disaster. Last night I made Orange Blondies which I plan to serve with homemade pumpkin pie. According to the hubs, they were tasty, but not the right texture. I'm going to look for a new recipe. Next up is homemade cornbread which I plan to turn into toasted croutons for the stuffing. Any recipes you'd recommend? I really need this distraction, and because my restriction is still great, playing with food is not a danger for me at this time.
QOTD1 - reading, mythology. Actually anything about civilizations. Probably why I still adore my National Geographic magazines to this day.
QOTD2 - I've tried an awful lot of them for sure. But for me, the biggest misconception was calories in/calories out will control your weight. As I've said before, months of less then 1100 calories a day still resulted in a steady net gain for me. I mean, at 200 pounds, I supposedly used up around 1450 calories a day just existing, so how come I couldn't lose weight?

D: turkey breast and cauliflower mash for me, probably some mac and cheese for the hubs.

My kids like this corn bread I make to go with chili.
- 1 1/4 Cups flour
- 3/4 cup cornmeal
- 2 teaspoons baking powder
- 1/3 cup sugar
- 3/4 teaspoon salt
- 1 1/4 Cups whole milk (I've used low fat, and even skim milk and they work fine, but the best is the whole milk!)
- 1/4 cup butter (room temp)
- 1 egg
- Preheat oven to 400 degrees F.
- Combine all the dry ingredients in medium bowl.
- Add the milk, butter, and egg and mix only until all the ingredients are well combined.
- Do not overmix.
- Pour the batter into a greased 8x8-inch pan.
- Bake for 25-30 minutes or until top is golden brown.
- Let cool slightly before slicing.
- Slice with sharp knife into 9 pieces.

You can't go wrong with my pumpkin cheesecake recipe if you want something luxurious. I love your doing all kinds of fun new recipes. I am trying a Popeyes turkey this year and I'm worried about the family not liking it. So fingers crossed it goes over well.
