What's on your Monday Menu?

Hey Everyone! Welcome to a new week... who is ready? I am good with it, because my weekend did not have enough structure. I ate way too much crap (including some cool brownies!)! But it was a really nice weekend. We got to see Grim's daughter (by talking in her driveway for awhile), visited our our neighbors for our last outdoor dinner of the season, and we took a trip out to my favorite farm stand (yay!). I also had 2 zoom meet ups with friends :) Now that we have been so locked up, that felt like a really full weekend and I would love to have another day off to recover, haha.
Actually I made a decision to take ALL of next week off. It's a quiet time of year and I have so much vacation time that I am going to lose if I don't start taking it. I have no plans at all, but I hope to be crafty and just have some low key fun. I still have lingering effects from that nasty cold, too, so I hope that a full week of extra sleep and relaxing might be able to kick it.
QOTD: Imagine you can pick one type of weather to have every day, forever. What is it like outside where you want to be? I do love these crisp fall days, but my ideal day is 83 degrees with bright sun and low humidity. I'm already in mourning for the end of summer.
I got a ton of really yummy food at the farm stand, so I have a nice menu this week :)

Happy Monday!! We have snow!! I don't think I've been this excited for snow ever. The fire areas are supposed to get a foot plus before it stops later today so I hope that helps!
it was probably our last girls brunch on Saturday, it was cold, we even kept gloves on (outside dining next to the fire pit but it was still cold!). Because of schedules and holidays we usually don't get together in December anyway so it's just a bit earlier...and maybe it will be better come January!
sunday, my training session was moved to 1230 from it's usually 645 so to make sure inertia didn't set in I baked keto biscuits, made a batch of banana-pb-Kodiak muffins and got everything ready for a Moroccan influenced stew. Everything came out pretty good! My menu will look very similar all week due to all the cooking!

OMG we have snow predicted on Friday and I am really not mentally prepared. If 2020 keeps going like it has, nothing good is going to come from adding Nor'easters to the mix.
Your stew sounds yummy! Did you make it up or follow a recipe?

It was from the new Milk Street Cookbook "Cookish" - it was roast, chopped for stew; one package of dried apricots, chopped; 6 smashed and peeled cloves garlic, 1 teaspoon each cumin, salt and pepper (I used 2.5 cumin and pepper) and 1/2 tteaspoon saffron threads, bake in Cover Dutch oven for 2 hours at 325; stir in half cup water and cook for another Hour uncovered. I also added a jar of almond stuffed green olives at that point, drained. Once cooked let sit covered for 10 minures and then stir in juice from one lemon. It was good and super easy!

There are wonderful days in every season, but what I love the most is a 85-90 day with clear blue skies, blazing hot sun, lots of green trees, and enjoying it from the middle of a swimming pool. Whatever else is in heaven, I hope there are hot days and swimming pools.
I am so happy that you are taking some vacation JB. I used to work for Ross Perot, the person who started EDS and ran for president years ago. He gave everyone two weeks vacation from their first day of work. He said you needed one week to go somewhere and have fun and one week to just chill out and forget work. He did not like to see that vacation time broken up. He did not want to see that vacation broken up.
When you took vacation, he did not want to see you for two weeks. After two years, it was three weeks, and then capped at five weeks after ten years.

weekend was pretty ok, got oil changed, saw my sister. went to Costco bought paper towels, a gym top, egg whites, and eggs.
sunday was house stuff and gym.
QOTD: I love early fall temps aren't too hot and there is usually a breeze.

Good morning all! Sad to see the weekend go and dreading today. I had a great time catching up with my friend and her daughter over lunch yesterday. We may get to do this one more time before she has her second baby girl. Accountability was an improvement over Saturday, but still not great. I just want to throw the whole weekend out the window and start over. My weight is also up which I have no one to blame but myself so this week it's back on track. Got a lot of healthy groceries for the week ahead so I have no excuse not to be good!
QOTD: Cool, crisp fall day in the 50's! Not too hot and just cool enough to wear a sweater. Love those days! Unfortunately here it's turned back hot again. Ugh I want my fall weather back! It never really sticks around though until well into November.
