What's on your Monday menu RNY? and some VSG'rs

Good morning and thanks for starting us off!!
im ready for the week. I just adjusted my schedule since I'm taking "half" a day off tomorrow for my birthday and decided to sum up all my meeting hours this week -- I have 35.5 hours of meetings; my half day is really only two hours off since I'm in meetings from 6 to 11 when I'm logging off. This is why I'm putting in at least a half day every Sunday. But it's work and I know a lot of people have lost their jobs and it's work I enjoy, which is something I've always been lucky in!!
my menu today is
B - pumpkin-chocolate protein muffin (I used the WW 1 point muffin recipe and swapped out pumpkin for the banana and added some fall spices like ginger, all spice, it came out very good. I used 3/4 can of canned pumpkin to replace the bananas).
S - carb master cottage cheese
L- left over roast beef With slice cheddar
d - protein waffle with PB
s - toasted marshmallow L&F greek, frozen
coffee + half and half x 3, 100 oz water
rest day from exercise today

Jinx! I was gonna DM you about the pumpkin muffins. I made them too during the weekend because of your previous post during the week. I used the cinnamon oat kodiak and subbed the banana with pumpkin. Used half a can. My muffins are a little bit tasteless - maybe lack of sugar from banana, next time I'll add some Splenda or stevia. But a good call on pumpkin.

I think using the chocolate muffin mix added just enough sweetness. I looked on my shelves and I have a box of the pumpkin flax...those with pumpkin and dark chocolate chips, might hit the Thanksgiving time rotation.

On the original recipe one person felt that they needed a good sized pinch of salt in them.

OK, so I need the recipe for the WW muffins. I'm not a big fan of bananas, so I think that pumpkin sounds better. BTW what are the macros?

Thank you! The recipe was super easy
2 eggs, beaten
2 bananas, mashed
1/2 kodiak protein muffin mix of your choice
I swapped the bananas for 3/4 can of pumpkin, bake at 350 for 22-24 minutes.
Not sure on the macros though -- they were either 1 or 2 WW points in the original (banana) configuration. The blend made 6 in my jumbo muffin tins (the were not very tall muffins, but wide),

Thanks. I'm looking at the Kodiak muffin mixes and flapjack mixes and the muffin mixes carbs are 46g and the protein is 14g for 2 muffins; 9g carbs and 14g for 1 muffin. Odd.
