Good for you and sleep! Not much occurred in my room last night. I think I am getting wound up thinking about my travels to Florida in 6 days. This week is all about wrapping up things here and packing. With my SIL's 70th birthday celebrations thrown in (the family gathering is at my home on Saturday).
Accountability: I had planned to be back on the planned eating wagon yesterday but then my son had an adhoc dinner party.
QOTD: Not since I was forced to write them in high school. I am NOT poetic.

Liz, question for you on the WW muffin, do you think I can sub pumpkin for the bananas? I have some of the Kodiak chocolate muffin mix and I'm thinking that would be delicious with pumpkin.

Ooooh, now I'm curious. So instead of three bananas how much pumpkin would you use?

I am thinking One cup. I might make it with the bananas again and measure the volume of the bananas. I have canned pumpkin so it won't go bad, lol

In this recipe this woman is using a whole can instead of the 3 banana. So think that's the ratio for muffins too.

I made these this morning! 2 eggs,
half cup of the Kodiak protein mix (chocolate) and about 3/4 of the can of pumpkin, I also put in ginger, all spice, cinnamon and a couple twists of black pepper. Very tasty -- moist but dense. The pumpkin is not as sweet As the banana but Has a nice flavor.
going down this rabbit hole, next week I think I will try the original recipe but half banana/half peanut butter.
