What's on your Tuesday Menu?

Morning everyone! Starting off the day with a little Queen is never a bad thing, right? Did anyone see the new episode of the Great British Bake Off? Someone made a cake-bust of Freddy Mercury and it was great :)
I am feeling sort of stressed this morning. My boss has been out with a medical emergency for a week and I really need her! Our department has historically been really bad about documenting how to do things, and it's been clear for a long time that if my boss suddenly left, we would all be in big trouble because most of the crucial information lives in her head. I have done a lot to document this year as a side-project, but there is so much more to know! I canceled two meetings today so that I can put in some extra hours to figuring this problem out without her... Wish me luck!
QOTD: What's in your freezer? Our freezer is ridiculously small, and 75% of it is Grim's meat! I love buying fun frozen things from Trader Joe's but I try to hold myself back because nothing ever fits. I wish I was the type of person who cooked and froze leftovers to pull out but we just aren't set up for that with our tiny, skinny side freezer.
I'm doing a complete repeat of yesterday's menu, and maybe today I will actually eat it, haha? Yesterday wasn't a total disaster, I guess--I stayed on plan for breakfast & dinner, I just switched out lunch to something that was an easier "grab & go" but it was higher points, and then added a bowl of grapes later.
Good morning all! I have got to start getting better quality sleep! I'm so tired right now I may just drink the entire pot of coffee! Maybe I can get in a little nap on my lunch break. Doubtful though. Accountability was good yesterday. Today will hopefully be the same.
QOTD: my freezer is also tiny and jam packed! I really need to go through it because there are probably some stuff in there I don't know about for sure. The items I know about are some frozen chicken, salmon, hamburger patties, veggies, SF fudgesicles, SF popsicles, bananas, berries etc.
B: coffee w/Splenda & SF creamer x 2
B2: protein shake (premier shake mixed with a frozen banana)
L: 2 oz roast beef and a hard boiled egg
D: 4 oz baked salmon and broccoli
S: L&F Greek yogurt and fruit

Good morning menu friends and thanks for starting us out, JB. Miss Lily and I have our first long walk in and will do more later. Accountability was spot on food and stepwise and weight is 120.4. I ended up having a Denver omelet at lunch and then ate leftovers of that for dinner. Here's the food plan B 1/2c steel cut oats with protein and peanut butter L 3/4 c beef and mushroom soup D 4 oz ground beef patty with cheese and no bun. QOTD hubby's breakfast burritos,mahi mahi fillets,burger pattiesand some Amish butter. Remember it's a tiny camper frig. Not much space for anything at all. hi all- still no news from me. hopefully today. good news is my weight took another turn on the scale so yay for that. all the darn shakes are creating a bit of a deficit considering I haven't been to the gym in a week.
QOTD: we have a bottom pullout freezer. It has ice in the top left, frozen Cadbury eggs for DH, frozen baked goods for DH, then under that basket a pizza in the lower left, chicken, ground turkey, some frozen veggies, then veggie burgers, turkey burgers. DH found that with kidney stones less meat is actually better plus it actually also helps with his acid.

It's so frustrating that you have to wait so long. I am sure most people cannot just isolate completely for a week while they wait and that is how it gets spread. I am so done with how bad America is at everything.

QOTD - I have an omni husband and bonus kids, so our freezer ranges from frozen jalapeno poppers to ice cream, to my lentils and frozen bread. There's also multiple bags of chicken (shredded), rice and carrots (cooked) that I use nightly for dogs food. So much stuff.
Breakfast- fasting, hot black coffee and water
Lunch - soyrizo, kale, tofu scramble
Snack - yogurt with chia seeds/hemp seed hearts
Snack - PB&J (1/2)
Dinner - No clue, but thinking a vegan hot dog, a few fritos and melty vegan chao cheese, small side salad.

I watched the Great British Baking show and really enjoyed all of the cake busts. Right now my guess for winner is the lady in the blue head wrap. Because of COVID, the contestants and staff had to agree to live at the site for as long as they remain in the show. I think it is 14 week quarantine. In the past, they just showed up on weekends and then went home and practiced for the next show.
I always told people that I worked with that having one person who knows absolutely everything is insanity. Every time I ran into that, I insisted on procedures and policies being completely documented. I remember studying for and obtaining a green and then a black belt with standards organization but can't remember now what it was called.
I would work with departments to create overall procedure manuals and then site specific manuals. Many people feel threatened when asked to share their secrets. It takes mandated direction from the top down to be successful. I started long ago with loose leaf binders. Then converted to online systems that were easier to keep updated. But I always advised that there be a printed copy updated at least yearly and a copy stored off site in case of a disaster at the original site.
A memory that I have was talking to a plant manager from a GM plant in Hong Kong. Like many Americans, I am not good at geography. So I advised him to store a copy of his records about 25 miles away from his main factory. He told me that Hong Kong is a small island and the only way that he could store records 25 miles away was to put them in a boat and have someone row them around the island. I settled for a safe deposit box at a bank.
I worked with a manager from Japan whose plant was producing wiring. He explained to his workers that the wires they were making would be used on cars in the US and Canada. He explained to them that their work must be perfect because in those countries it would be possible for a car to break down and be in a place where the driver could not just get out and walk to a house for help. So that person could die from heat or cold if they gave him bad wires. In Japan, the population was so dense that those workers had never imagined being stranded somewhere with no other people for miles around.
