I have an amazing recipe for enchilada sauce, let me know if you want it. You can use it for so many things, not just enchiladas. It's super easy too.

This is the one I use. I double the recipe, and I use low sodium vegetable broth (regular sodium of chicken OR veggie stock is too salty for my taste).

I never would have thought to start enchilada sauce with a roux. I will have to try this the next time I make enchiladas.

I grew up on Irish stew, or ham and cabbage. I married an Italian so made sauce on Sunday. The sauce always had meatballs, and also pork, beef, or chicken. So spaghetti on Sunday and Wednesday, then used the sauce for stuffed peppers one night and stuffed cabbage another night. Always pizza on Saturdays and of course only fish on Fridays.

We always had lasagna also with the turkey or ham on Thanksgiving and Christmas. We still have lasagna every Thanksgiving and Christmas in memory of my husband.

we usually have lasagna on Christmas, too. A former co-worker told me one year that they always had lasagna on Xmas, and I thought that sounded like a great idea! You can put it together the day before, it feeds an army, and everyone loves it! I mentioned it to my husband, and he said his Italian grandmother always made lasagna on Christmas - so it must be an Italian tradition. Anyway, we've been making it ever since!

Good morning everyone. Hope you are all well.

I'm feeling a tepid ok physically. Still kind of have that fish bowl feeling in my head and the cough is still ick but I do feel better. I think I have a really "good" sinus infection. There are some telltale signs of that.

I got my big girl camera out yesterday for the first time in a while. I was pleased with them...I didn't take many and I was shaky but a couple came out that I really liked. I love morning glories!



JB that fish is just so cool! I love that!

not much planned for the day that I know of.

qotd: I used to make decadent desserts for family stuff. We no longer have them since my grandparents passed away(long story as to why...short answer is family can suck). My favorite was a fruit "pizza" tart thing I made. It was so so so good but so so so not healthy. At least the way I made it lol. My least favorite is a green bean casserole my late uncle's wife made. I don't know why she bothered. She never was a good cook. It was gross.

food is up in the air. Breakfast will be eggs but that's all I got.
