What's on your Thursday Menu?

Cornbread is one of the few foods where I could not stop at one small piece. If I make it, I end up finishing it in a day or two. You have great self control to stick with a small piece.

I was planning to make soup this week, but the weather went back up to 80 here in Ohio and soup is not as appealing to me in hot weather.

I bought individual cornbread disks at the grocery store. They are small,probably about 5 bites and usually Miss Lily gets one or two of the bites as well. They also had square pans but I would eat that all at one time too. Since these are preportioned it helps me have self control.

I am obsessed with corn bread with jalapeños! I could eat 100 muffins in one sitting.

I ate that in California years ago and loved it, but don't know how to make it. It is probably a good thing that I do not know how to make it, because I would not be able to stop eating it.

Cornbread disks is a good idea. I don't know of any store that sells them around here.

Gorgeous fish!

Well all the meals out are catching up to me as I am a pound above range. A little bit bloated, but still that's not all of it. Mike and I had a good night out with his longest term friend (since age 3). We had a really good time! Good conversation and food at a place on the deck of a restaurant on a river. The weather cooperated for outdoor dining so we didn't even need jackets. Today I am going to his part of Cape Cod to walk on the beach in Provincetown and poke around in town. Then I am back home for dinner out with the family. I think it will be easier to settle back into a lower eating level once I get back to Florida.

QOTD: Generally someone will make a chicken casserole: cooked shredded chicken in mushroom soup with green beans and wine (the latter 2 optional). It is topped with fairly dry prepared Pepperidge Farm herb stuffing.

TSS: 4 years, 6 months

B: Coffee!!! Scrambled eggs and cottage cheese

S: WW one point muffin and/or strawberry-blueberry-cheesecake yogurt pie

Good morning, happy Friday Eve.

QOTD - I have several dishes that I make at certain times of the year. They have become part of social gatherings. First would be my homemade mac and cheese. It's got an insane amount of butter, cream and cheese, and a secret ingredient that makes it stand out. I got it out of a James Beard cookbook about 20 years ago, tweaked it and it's one of the best things ever. Sadly, I make it and don't eat it anymore because butter, cheese, cream and milk, but I still make it on request for my girls. Second, would be my pozole. I learned to make pozole when my girls were little because we were missing out on dad's family "food" of menudo. None of us would touch that with a ten foot pole, but I wanted my girls to have the experience of a yummy giant pot of soup, so I learned how to make that. Now, they make their own but insist mine is still the best. I have veganized my recipe so when I make it at home for just hubs and I, I can also enjoy. Lastly would be my enchiladas. I make them from scratch, my own sauce, etc. And of course homemade tortillas on the side. I'm a pretty decent cook. I did NOT get fat from bad food or junk food. I ate extremely well, lol.

Breakfast - fasting, so hot coffee and water

Lunch - 1/2 toasted bagel, tofu "egg" patty, soyrizo scramble with kale, tofu and vegan cheese.

Snack - fruit smoothie, frozen fruit, oat milk, chia seeds, hemp seed protein, kale

Snack - leftover piece of vegan pizza

Dinner - Vegan spaghetti with a veggie and garlic knots. We have kids tonight, so back to normal dinners!
