What's on your Monday Menu?

Good morning everyone! The air is so much clearer here in the PNW. Being able to breathe is a wonderful thing! Fall is in the air and I love it. Heavy rain is coming this Wednesday, which will hopefully help more with the fires.
I had bloodwork done last week for my yearly visit. Everything looks great. I have gained 13 pounds since February. It could of been worse. My doctor left the practice, so I saw an endocrinologist that works with my surgeon. She also did an ultrasound on my thyroid. I have Hashimotos. She said no gluten at all, as it causes inflammation.
I have got to get back to basics and weigh and log everything. I know I have in a funk with not working since March and my son leaving for the Coast Guard. And apparently I am in peri-menopause too. I have just started a low dose birth control pill to help even me out.
Life is still so good though and we are blessed. Our bills are paid, we are safe, my adult children are doing amazing things. And I still adore my husband. He is my favorite Covid buddy. I am just trying to figure out my new normal. I really miss people and hugs.
QOTD- This is perfect timing for me JB! One of my favorites that I forgot about was Liz's cottage cheese and eggs. I love it!
Food plan for today-
Omelet - 1 egg, 2 oz ham, red onion, topped with tomatoes, basil, balsamic vinegar and parm. ( so fresh and delish)
leftover baked chicken breast from last night and asparagus.
chomps in my purse if I need something while grocery shopping
Some sort of fish and fresh sliced tomatoes. ( my neighbor gave me some from her garden and they are amazing)
I would really like to lose 30 lbs and get to my ultimate goal weight by Jan 1. My doctor said, 80 grams of protein at least, carbs under 20 and under 1000 calories. Is this do able almost 4 years out??
Lots of water today and vitamins always. I am also going to delete my FB. I didn't realize how much it was affecting my mental health.

It is doable at any number of years out. For me it is a matter of getting into that mindset, clearing the house of most carbs, and setting very clear goals. I get a calendar and mark what I expect to weigh on a certain day each week and then put a big star on the day I intend to make my goal.
I lose two pounds a week, so 30 pounds would take me 15 weeks. It is totally doable, but I have to have definite goals or I never get it accomplished.

G'morning everybody!
Late to the party. I love the pic of the zoo lights. Very neat. We have something similar here but it's around xmas.
Weekend was uneventful. Would I be a fuddy-duddy and considered old if I said the high light of my weekends are when we talk to the kids? Since DD left for college, almost 5 years ago, we've always had a standing face time appt on Sundays. Although we text during the week we try not to bother them with phone calls so we keep all of our questions for our Sun calls. Since DS left we now have zoom calls on Sun. My heart bursts with love and relief when I can see both my kids healthy and happy. And when we are all on the calls it's almost like we are home.
QOTD: everything I use I learned here on OH. From eggface to protein shakes to chaffles. Speaking of new stuff for OH, have you guys heard of souper cubes? I just heard of them. They are perfect for us, portions of one cup or 1/2 cup. I made a huge batch of chili and froze it in the one cup portions. And I have pork shoulder in the crockpot and ready to portion it out in 4 oz sections. Nowadays I get excited for little things.
My weekend was off the rails, ugh! New week, new start.

Super cubes -what a good idea! I wish we had a bigger freezer. It's so poorly designed so it doesn't hold much at all, and Grim stuffs it with his meat, so I would never have room to use those. Love the idea, though!

Happy Monday. I haven't been on here long enough to actually try any products yet but I am going to start soon. I did hear tastes change after surgery so....we shall see.
Breakfast - Eggs, sausage link and cold brew with almond milk and sf syrup
Lunch - Chicken burger and steamed broccoli (I really wanted cheese on that broccoli but did not cave) small romaine salad with fatfree dressing.
Dinner - It is pasta night (husband loves it) so I focused on whole wheat pasta and low sugar pasta sauce Raos. I am making a baked ziti and using chicken meatballs. I am not even telling the hubs what is in it or he will complain about him not getting what he likes to appease my eating needs. So, we will see how this goes.
Snack - Greek yogurt with fresh berries.
I need to find an app to track my calories if anyone has suggestions.
My Fitness Pal. I use the free version but you can upgrade and pay. I have never the need for the upgrade. There library of foods and Macros blows away the competition you can scan any bar code and it is usually already in there. I am so excited for you to start the process. Good luck we are here cheering you on.
