What's on your Wednesday Menu?

I made Christopher Kimball's "breakfast farro" in my Instant Pot this morning. It's farro with cardamom and dried apricots - and you top it with plain Greek yogurt and (supposedly) honey, but it was already pretty high in calories, so I used Swerve (the brown sugar version) instead. I put honey on DH's. It was very good - although not a lot volume-wise because of the calories in the farro. I have a couple of other things from that book that I'm going to make within the next few days - I got the ingredients last night (although a lot of this stuff I already had...)
I have a "telehealth" appt with my endocrinologist at 11:30. We'll be discussing the bone scan I had last month - and whether I'm to continue on Reclast or move to a bone-building drug (Reclast just maintains bones - doesn't build them). I'll probably take a bike ride before that. And I'll continue to try to enroll in my two classes at the university. I got permission to enroll and was told I could enroll any time after 6:30 a.m. this morning, but the system is still telling me I need permission. ARRGH! I emailed the appropriate office - hopefully I'll be able to get in today. I have until Sept 11, but I don't want this hanging over my head.
Accountability needs to improve. I did better yesterday (I hit the middle of my calorie range instead of my high end), but I need to be at the low end for awhile. Will try again today. Why is this so hard??? At least i'm not gaining - but I want to start LOSING!
QOTD: as I mentioned to White Dove (above), I'm a late Baby Boomer, so as might be expected, my favorite musical era is late 60s/early 70s.

your comment reminded me that I have a copy of Alfred Lunt's cookbook around here somewhere (he was a Broadway star in the early 20th century along with his wife, Lynn Fontanne). In addition to being an actor, I believe he was a trained chef. Or at minimum, a very accomplished cook. At any rate, he has a wonderful recipe in there for Swedish cardamom bread. It was fabulous. I haven't made it in years, though - since before surgery. If I knew I could control myself around it, I'd make it again!
actually, I just checked Wikipedia. Trained chef. He was a graduate of Le Cordon Bleu.
they had a gorgeous home outside of Milwaukee that is open to the public. It was originally their summer home, but they moved there permanently after they retired (he was originally from Milwaukee - she from the UK)

My roommate in college always received a fragrant cardamom cake from home for her birthday. Poor girl was born on 9/11, but back then of course it was just a day to celebrate!
I still avoid all baked goods and sweets - I know my weakness and for me it's far better to never start! But that bread sounds marvelous. I think I would be happy just to smell it! That thought reminds me of bacon, which I used to love. I have found that for me, bacon's great appeal is olfactory. I no longer really like to eat it. It's no sacrifice to not put it in my mouth, but wow does it ever smell good!

that sounds yummy. I put cardamom in my coffee grounds some times...or cinnamon, or cocoa powder....sometimes all of them.

Ahh the 4 day weekend. What a treat to have on your plate. Also I am sorry about the M&M incident. I have had that problem myself. I am loving the new popcorn flavor and as soon as 1 bag is open I find myself digging in the bowl. They are evil little treats wrapped in a candy coated shell. WTF. Lord make it stop!
Looks like a busy day here at work. One of the Home Health care I work with in Louisiana had some major damage at the corporate location in Lake Charles so I am trying to help them find some kind of new Normal. Many of the patients were displaced so there having a hard time finding where they are. Hopefully they can get a handle on this soon.
QOTD: I love all kind of Music. Just depends on the mood. Last week I dove into some old Harry Chapin from the 70"s but My regular radio station in the car is top 40. I am all over the place. I like I heart because you can always find what your in the mood for.

Exercise: 3 Mile run (Probably not it was raining this morning so I did not get out)

Good morning! It is supposed to be a beautiful day here in San Diego, and it's my Friday! 5 day weekend coming up. Ahhhhh. I've got a PT appt and a telemed appt with my surgeon today, plus making sure my desk is in tip top shape to pass off, so I am looking at a full day. I just love that. We got the RV cleaned out (well, honestly my husband did most of it) and just washed all the clothes from last week and put them back in (again, all my husband). Tomorrow we'll make coffee and hit the road. Hopefully I'll log on from there for a menu update.
QOTD: I do love 80's music, in fact I love everything but jazz and punk (sorry), but my fave is post 2000 country. I was raised on Johnny Cash and Loretta Lynn, and that's where my heart remains.

It is great fun. We had a 5th wheel while the kids were growing up, took a break for a few years then had an itty bitty 15' trailer for a few years. That was great for weekends, but just too small for really traveling. So we gave that one to our son in 2017, and this year upgraded to a small class A. We really enjoy the lifestyle of cooking outside, chairs around a campfire in the evenings, that sort of thing. But if you haven't done it, I highly recommend you rent one first and try it out. There are lots of used units on the market because people find out that in reality, it's just not their thing. (And they expect the used market to be HUGE next year, because of the pandemic. Everyone who couldn't travel for the summer normally seems to have bought a new rig.)
