What's on your Tuesday Menu?

Makes 12 muffins.

  • 3 Bananas
  • 3 Eggs
  • 1 Cup of Kodiak Cakes Cinnamon Oats Power Cakes Flapjack and Waffle Mix ( Or any flavor you like - the Dark Chocolate is Delicious also)
  1. Take your Bananas and peel them.
  2. Place your Bananas in a large bowl and smash them really good with a for****il they are really mushy.
  3. add in your eggs to the Bananas and mix together well.
  4. add your Kodiak Cake Mix and stir everything together. Mix it well.
  5. ***Special Note - If you add 2 Teaspoons of Baking Powder the Muffins will come out Bigger and Fluffier
  6. Take out your regular size Muffin pan and spray the holes with some non stick Spray so the Muffins do not stick.
  7. take your Muffin mixture and pour the batter into each Muffin hole - fill each hole about halfway with the mixture.
  8. place into the oven at 350 F Degrees for 15-20 minutes.
  9. When cooking time is complete remove from the oven and let cool.
  10. When removing the Muffins from the pan just run a butter knife around the edges and they should pop right out easily.
  11. if you have any leftovers make sure to refrigerate them and just heat up in the Microwave when you want a snack.

It is hard to see them leave and the house feels empty for a while. But they come back! (Sometimes more than expected)

Good morning from the center of the sun! It's been hot and I miss the slight chill in the morning air, it was already 84 degrees when I woke up this morning so even the whole house fan can't be used when it's that warm. There are also several fires so air quality is bad in my area. I am grateful for AC. JB- glad you were able to get your car taken care of pretty easily. Em had a good first session yesterday and only had to be logged in for about an hour, probably about the same today.

Accountability: Not bad. Extra elliptical time and some additional snacks.

QOTD: Nope!!

B: SF latte, Quaker protein/fiber oatmeal and turkey sausage

L: Albacore tuna lettuce wraps, SF Jello with cool-whip and baby carrots

S: Turkey wrap, quest chips and Carbmaster yogurt

D: Tri tip salad, toasted lavash, sliced fruit, and 2 squares dark chocolate

ES: low carb pita with SF jelly and cream cheese, Homemade Greek yogurt with SF syrup and ¼ cup fiber cereal

E: 6 mile treadmill run and one hour elliptical

V/W: On track

Wow I was reading about the temps out your way--that's crazy! Hope you don't get any blackouts... We finally broke the heat and humidity and had few crisp cool mornings. I even had the heat on in the car driving to my mom's yesterday morning!

Yes, luckily they didn't to do any rolling blackouts yesterday. The DMV offices are even closing early to assist with the drain in the electricity.

It's Tuesday and looks like a busy day ahead. Glad to hear you had success getting your car fixed yesterday. It's always so nice when that warranty kicks in. Hoping to settle up my car problems soon. Lets all keep our fingers crossed.

QOTD: I am not a procrastinator. To the point that I jump the gun and get it wrong sometimes.

Accountability; I had a turkey cheese rollup and 0 point WW cheesecake with berries. I also switched out dinner to a crack chicken quesadilla on a low carb tortilla.

TSS: 2 years 8 Months and 7 days 134.2 (lowest 130.8)

CB: Dark roast coffee with SF ID Pumpkin Spice w/Miralax and Fiber

MS: Oikos Triple Zero Cinnamon Apple Greek yogurt and Berries

CB2: Dark roast coffee with SF ID Pumpkin spice

L: Chicken salad , Oh snap dilly bites, and a Snake select

D: BLT on Zero net Carb bread.

Water and vitamins: On track. I take a Bariatric advantage Ultra multi w/iron I use bariatric advantage Calcium chews and my blood work has been great. My B12 has been High so I cut my sublingual to every 3rd or 4th day. And I have now added 500mg of Magnesium

Exercise: 3 Mile run (Done)

Good morning! Another hot day for us here. AC's are cranking and the electric company is talking rolling brown outs and black outs. They can just step right the hell away from my AC. Hands off (or I should say technology off). Work was ok yesterday and I did several huge quotes, so I'm hoping to see from joy from those this week! Mama needs new shoes! And bra's and pants, and dang near everything. LOL.

QOTD: I tend to set things I'm not excited about aside while I do other things and ponder how to accomplish the task, then go back and jump in with both feet and pound it out. Right now I am struggling with the State of CA on complying with the Registry of Charitable Trusts for our non profit foundation. After being overwhelmed by it for too long, 2 weeks ago I sat down and redid every year since 2016 and sent it registered. Yesterday I got notified they are going to take our tax exempt status if I don't get this resolved in 120 days. So I think I am ahead of them. Need to spend time this week on the phone trying to reach someone. I mean, I've sent them every year, but not traceable mail and they always have a reason I need to change them. Fingers crossed that I beat them to the finish line. UGH!

L: final 1/3 of my Chipolte's chicken bowl with no rice

D: left over tri tip, tomatoes, maybe a 1/2 c mashed potatoes
