What's on your Tuesday Menu?'
on 8/4/20 2:25 am
Morning everyone! How was your Monday? I ended up having a long 10.5 hour day, but I got a lot accomplished and generally feel good about the Day One onboarding for my new assistant. I decided to cancel a few of my Tuesday standing meetings to make sure I don't start the week overwhelmed, so I think I might be able to stay caught up today (its a miracle!).
Today we are bracing for Tropical Storm Isaias heading towards us today. Heavy rains and winds up to 60MPH expected so I guess its an indoor work day, haha. This will be our first huge storm since I got my outdoor furniture. I hope it holds up!
15 days into my personal challenge, yay! I ate 21 WW Blue Points and did this awesome challenge as a fundraiser for Tommy's cancer battle. I couldn't keep up with the pace but I set my own, and I finished. The scenery was incredible. I have never considered Bolivia as a vacation spot, but it's on my list, now!
I hope the storm doesn't stop UPS deliveries... I am expecting my treadmill desk to be delivered today! I think it's going to really help with my 8000 step challenge. I might even up it to 10K if I can be walking during meetings now!
QOTD: If magic was real, what spell would want to learn first? Well, as an RNY person, I would definitely want to learn how to make calories free... bring on the donuts, haha! I'd also love to wiggle my finger and clean the house, or at least get rid of the cat hair, haha.

Good morning and happy Tuesday! JB, glad your week is going well and I hope the tropical storm isn't too bad! I have a couple days of way too many meetings but it gets a bit better by Thursday and Friday. I struggle with time to do my work in between meetings some weeks and I have a big presentation on Thursday so it will be one of those weeks!
i get to go back to Pilates today -- I have to use all 8 of my monthly sessions by next Tuesday so will have several days of dual classes, which I don't mind at all!
my first attempt at tri tip went ok, it can be improved for sure but not awful!
QoTD - teleportation! I could go to all the places without travel time!

I have the best tri tip recipe!! We have tri tip here in So. Cal, but it turns out, it's not available everywhere, so if you can get it, I highly recommend this recipe. I've never been able to make enough to have left overs, as it's like crack, and people just keep reaching back to the platter for more.
Large rock salt. like Ice cream salt, but ice cream salt isn't supposed to be ingested. We buy the big container of Pink Himalayan rock salt at Costco.
on a tray, put down a layer of salt. Press the tri tip into it, layer another layer of salt on top and press that down into the tri tip. Cover with plastic wrap and let rest for at least 30 minutes, up to an hour. Pick up the tri tip and over the sink, using the side of a fork, scrape off all the salt you can. I keep rotating and scraping until I can't see any more chunks.
Prep your barbecue to about 350 degrees. Slap the tri tip on the hot grill. 8 minutes each side for medium rare. Rest for 5 minutes, slice in 1/2" wide slices. Eat. Crispy, crusty salty edge, moist, tender juicy inside. Enjoy!

Yes, I just used some oil, crushed red pepper, salt, garlic and a bit of oregano and black pepper. It had a really nice crust but I need to tinker with the ratios a bit.

Good Tuesday morning menu friends.
yesterday was a mix of a little good and some pretty bad stuff.
bad first so I can end with good :) I had a horrible panic attack yesterday, the worst I've had in a long time. Lots of things happening and I'm feeling pretty useless. Hoping the new depression meds kick in sooner than later. I start the full dose Sunday. In the mean time I ate allllll the things yesterday. My mom made cinnamon rolls and cinnamon bread. I didn't have a cinnamon roll but had a small piece of the bread. I had some chocolate and some fruit snacks. Just not pretty! Not giving in and today is a new day. Emotionally I'm spent.
good news! My appointment went well. He said anyone else with my issues(he pointed out men in particular lol) would of been using a walker or wheelchair. He called me a tough sun of a gun. Lol. The infection is clearing up and he said it looks really good.
no plans for today other than to get groceries as we star****ching the kids again Wednesday. I'm hoping to have time to make yogurt today or tomorrow.
qotd:fun answer would be teleportation for me too. I could go to all the places! Serious answer would be a pain free spell!
b:oatmeal and banana
l:oatmeal
d:thinking a salmon fillet and some cauliflower riced with cilantro
s:small bag of skinny pop popcorn, ????

Women are so much tougher than men for pain tolerance! Glad to hear the healing is going well :)
