What's on your Monday Menu?
Good morning menu friends! Miss Lily was not feeling well this morning so she and I only walked around the block but then I made myself go up to the park and do our regular 3 miles. Hubby fed her some salami last night which she ate too fast and made herself sick. She still looks puny this morning but seems more like her silly self. Accountability was spot on food and stepwise yesterday and weight is 120 today. QOTD I rarely make new recipes as I'm a creature of habit and so is hubby. Here's the food plan B 1/2c steel cut oats with protein and peanut butter L 4 oz tuna salad D 4 oz baked fish. Need to keep up the fluids as it's very humid today. Good Morning! I feel like one of those piggies this morning, just feeling puffy for some reason, I didn't feel I got my usual sweat-fest in during my workout this morning. JB- great job on continuing your plan, you're killing it. I hope you don't have too many lame emails come in today.
Accountability: Pretty standard for what it's been lately for me.
QOTD: I haven't tried anything new in a bit, I've been staying far away from Pinterest and baking anything since I know that I wouldn't behave-lol. I did start using "savory" chaffles as bun substitutes instead of the cloud bread.

I like the savory chaffes a lot. I was experimenting with a lot of herbs and spices in them and they all came out great.

there's a nice streak of weather starting today (high 70s/low 80s and no rain), so hopefully it's on its way to the east coast to give you guys some relief in a couple of days! I'd love to go out and ride my bike this morning since it's been too hot and humid to do that the last couple of days, but I've got my online Mah Jongg game at 10:00. So I'll go this afternoon since the weather should be cooperative. I'm planning to take an online class or two through the university this fall, so hopefully these guys will be able to switch the Mah Jongg game times if needed - I really want to just take what I want and not have to schedule around things (esp things like that!!)
my coffee "date" with my friend was a bust yesterday. She never showed up. We were supposed to meet at 10:00, and I texted her at 10:20 to remind her of where we were meeting (in case she went to the wrong place). Nope - she'd overslept. She was still in bed. Unfortunately, this has happened so many times - she's either ridiculously late or never shows - that I'm ready to just write her off. I really had no desire to go out for coffee and a bagel yesterday, and didn't need to spend the money - and ONLY did it because I was meeting her. So that is that...not doing it anymore. My time is valuable.
QOTD: I really don't cook that much anymore (esp in the summer) and when I do use recipes (which isn't often), I use them more as a guideline or inspiration as opposed to following them step-by-step, so not sure what to say here. I've been experimenting a lot with Liz's WW yogurt pie this summer because it makes a nice, quick breakfast or healthy treat. The other day I made a lime one using a lime and a small box of lime Jello rather than the lemon (and lemon pudding) in the original recipe. And no blueberries (I couldn't think of a fruit that would go with lime). At first I was a little concerned because it felt a bit rubbery when it first came out of the oven, but after a day in the fridge, it was fine. I think the rubberiness was due to the fact it had gelatin in it instead of pudding - but again, it was fine the next day. I also made baklava a week or so ago because I bought a bottle of this thick sugar-free syrup at a Middle Eastern grocery store several months ago and wanted to (finally) use it. I did check a recipe for that (I used to make baklava a lot so I checked more for the baking time than anything else), but it still has so much fat in it (clarified butter and pistachios) that I don't want to share an unhealthy recipe! (fortunately, I've been able to control myself around it because I know how many calories it has (slightly better than the real sugar version, but still....). I've been eating a small piece about every other day, and working it into my plan. I may just freeze the rest...
