Morning friends! Happy Monday! Hope you all had a great weekend. Mine was good. I had definitely gotten used to those 3 day weekends, so this weekend went by pretty quick, but I managed to check off almost everything that was on my to-do list, so that was good.
Today is going to be a miserable day, though. My coordinator is on vacation today and it's his day to answer off of the random emails from new hires that come into our general email address, so I will have to step in and answer them. I despise this task so much--the questions usually make my eyes roll back in my head, and it takes me about 10X as long to figure out the answers as it takes him. Plus we're in the middle of a miserable heatwave--today is going to hit 98 (!!) so I won't be able to work outside at all. Plus I am overtired from the cats waking me up at 3am. Plus my allergies are still making me miserable. Yeah--already not loving today, at all!
I did well with my "streak" this weekend--7 days down, 93 towards my goals of getting 8000+steps a day and staying under 23 WW points. Yesterday I had 10059 steps and 19 points. I went on an iFit hike up Machu Picchu, yesterday, which had the incline at 40 degrees most of the way! Happy to say I am not sore today, but my legs felt jiggly for awhile yesterday afterwards!

Liz, the Dijon tuna burger was great! Highly recommended:
- 1 can of tuna
- 1/2 beaten egg
- 3 Tbsp Panko breadcrumbs
- 1 Tbsp dijon mustard
- 1 tsp lemon juice
- Black pepper to taste
Makes 2 patties--cook on the skillet. I can imagine some other yummy variations with chilis, scallions, or other herbs instead of the dijon (I'd probably add in a Tbsp of greek yogurt to replace the moisture). I plan to experiment because you really can't beat the point total and it was very satisfying.
Morning! I'm pretty sure we broke our cat by leaving for a week and then coming home for 2 days and leaving for another 5 days. She has a fit if you don't let her in a bedroom at night. Last night she came in our room and she woke me up promptly at 4am. I got up and opened the door, but that was apparently not what she wanted. She sat there and purred at me and "booped" my nose straight through until 5:30 when my alarm went off. Then, when my alarm went off the little stinker stepped on my phone and shut the alarm off rather than snoozing it.
QOTD: We made this recipe last night (Jon did, it was his dinner night). It was SO good. We used cherry tomatoes from our garden and sliced fresh mozzarella on top instead of using shredded.

What is is with the uprising of cats today?
Mine was a jerk from 3am - 4am when I finally gave up. He also walked across the nightstand and turned on the touch LED light in the middle of the night. And my mom called at 6am in a panic to tel me that her cat managed to get out of the house and ran away last night. She used to be an outdoor cat in her youth, but she hasn't been outside in 5 years, and is 12 now, and never been outside while they've lived in this house, so they are frantic.
CATS!
My sister's cat slipped out the other day through a hole in a screen (that my sister either didn't notice, or that SHE put there). My sister was also frantic and then mid-afternoon the cat just came wandering back through the same hole she left through.
She's such a super cute cat. Her name is Marge, LOL.

Animal planet is airing some show on how to handle the cats during this pandemic. They say they dogs are so happy about having there owners home but cats really want you out of their space. You may want to check on the animal planet website about how to handle these cats. I think it is funny how they think you are infringing on there lives.

Morning and happy Monday, menu crew!
i am not looking forward to this week at work but at least it's a 4 day week for me. It's just going to be a painfully long 4 days.
my weekend was great, my niece and I had a lot of fun, had some good adventures and got some good exercise too.

QOTD - I honestly haven't tried a new recipe in so long. I stick to the ones I am comfortable with (creature of habit).
Breakfast - none, fasting. Hot black coffee, water
Lunch - vegan sausage, kale, tofu scramble
Snack - fruit smoothie, water, oat milk, frozen fruit, hemp seed protein and chia seeds
Dinner - up in the air, something with veggies.
