OMG My worst fail was a DiGiorno Pizza frozen. When I moved into my first home me and now DH were refurbishing the house before we moved in and I threw some frozen pizzas in the freezer so if we got to working and got hungry I could trough one in the oven. To me making pizza starts with flour and yeast. I had never cooked a frozen pizza. I guess you all know where this is going. I cooked it with the cardboard on. My husband BF at the time thought I was a mess in the kitchen. LOL He figured out that I am a great cook very quickly after that incident.

My first reaction to today?s post was ?it?s only Tuesday?, which is funny because yesterday wasn?t a crazy day. I think I?m just confused about days in general now!

my niece doesn?t share food and I always give her grief about it ? we did a family cruise and I would tease her at dinner and finally on the next to last day she says ?fine, aunt jennie, you can have a bite of my dinner?...and I had to laugh and tell her ?thank you but I don?t eat squid?, she was mad at me for at least 20 minutes. later we had a middle of the night cheese and dessert tasting where we shared so it was all made up (she got the idea from the drunk girls in front of us that were doing their own wine and cheese tasting, lol)

qotd - yes!! Many but the most memorable was the orange chicken I made in my early 20s and found out the hard way that cornstarch and cornmeal are different things.

I have Pilates tonight, have to do a touch free pick up at the library, and have a few meetings today, plus I have to make progress on my bookclub book as we have virtual bookclub on Saturday. Should be a decent day - it?s cooler and rainy here all day today.

menu today

carbmaster cottage cheese

left over green chile casserole

quark

everoast deli chicken with slice cheese

light and fit greek

half and half in my 3 coffees

have a great day!

Good Tuesday morning menu friends.

ugh...yesterday was pretty bad pain wise. Followed by a night of little sleep and what I did sleep was filled with nightmares. Not a fan of today already. It's going to be a long one as I've been up for 3 hours already. We have my nieces and nephew today and tomorrow. I'm tired lol.

not sure what else today holds. Hoping for a nap but I doubt that'll happen. Will wash my bedding sometime today and of course clean the kitty pans.

qotd:none that were bad results per say. My mom worked a lot when we were kids. Once I tried to cook her something...I think I was 11...and I accidentally started a grease fire. I put it out with milk. Yuck! I was lucky I didn't burn the damn house down that time. That was a nightmare.

b:egg beaters, dairy free cheese and a street taco sized tortilla

l:chicken breast meat and butternut squash cubes

Good Morning! JB, sounds like you are one happy camper, you deserve it that's for sure. A midweek day off will be nice especially having someone special to celebrate. I have a few calls today and of course I need to plow through some of these evaluations. I had a bad attitude yesterday (whether it was justified or not is debatable) but I knew it was not a good day to write evaluations.

Accountability: The bad attitude mentioned above also lead to unplanned/not needed snacking in the afternoon.

QOTD: I have made some fails while baking for sure but I think the worst was one time when I was making a meatloaf and decided to add shredded carrots and put way too many. It came out with a weird meat carrot cake taste... gross.

TSS: 5 years 9 months

B: SF latte, Quaker protein/fiber oatmeal and turkey sausage

L: Albacore lettuce wraps and baby carrots

S: Chaffle and carbmaster yogurt

D: Shirataki noodles topped with Alfredo sauce and grilled chicken breast, toasted low carb lavash, sliced fruit, and 2 squares dark chocolate

ES: low carb pita with SF jelly and cream cheese, Homemade Greek yogurt with SF syrup and ¼ cup fiber cereal

E: 6 mile treadmill run and one hour elliptical

V/W: On track

Totals: Cals:1468 Protein:131 Carbs:127 Fat:55

Have a great one!

Mornin' All!

well the tropical rains will start around 4:00 this afternoon, so I have plenty of time to get out on my bike. Oddly, the humidity is only 59% right now (I figured it would be WAY too humid - with that rain coming - to exercise comfortably outside, but no...). So I'll eat breakfast in about a half hour and then head out on my bike. Nothing else on the agenda, but I'll make strawberry/rhubarb compote later and maybe do some other meal prep for the next few days, since we're going to be stuck in those house this afternoon/evening because of the storm.

accountability was good yesterday and I had lots of exercise yesterday (morning bike ride, evening walk with DH, and the weight-training machines at the gym). Aiming for a repeat today...

QOTD: oh lots. I used to cook A LOT, so I've had lots of (mostly minor) failures. I don't cook nearly as much anymore, but I still have occasional failures. Four or five yogurt disasters - but now I use disastrous results in things like protein shakes and protein pancakes. Also, the other night we had MIL over for a Thai curry. I never make it with rice, but I did make rice this time for DH and MIL. I know I should have used my rice cooker or instant pot for it, but I didn't want to lug all that crap out - so I figured I'd just make it on the stove. This USUALLY works, but it didn't this time. First the rice was too dry after I cooked it, so I added a little water and cooked it a little longer. Then it was a mushy mess. Good Lord. I was really embarrassed - although the curry part was so tasty I don't think they minded. But still - ugh. We still have a lot of that mushy rice left - I guess I'll mix it into something else for DH. He doesn't seem to care about such things as long as they taste OK.

TSS: 5 y

B: yogurt pie (cheesecake-flavored) with 2 T light Cool Whip and some kind of fruit compote, coffee with half & half

MS: protein shake

L: another cup of the Chinese food I got last Wednesday (I can't eat more than a cup at a time because it's so caloric, but there's a ton of it and it's taking FOREVER to eat!). Plus maybe one Costco chicken skewer.

AS: L&F yogurt with raspberries. Maybe a skinny bagel with light cream cheese

D: I may just have yogurt. I have about five mangoes that I need to cut into soon - so 1/2 a diced mango on top of the yogurt.

Have a great day, everyone!

Good morning JB and Menuers,

Yesterday was beautiful here in Pittsburgh But today it is supposed to hit 90° low humidity. Hopefully I will still be able to get my run on. It was in the mid 80° yesterday and it went well so fingers crossed I can get one in today as well.

I thought I was going to be super busy putting a proposal for a new client I am trying to close, but surprise it went really smooth so I was able to deliver the pricing to them yesterday. The ball is in there hands now so fingers crossed.

QOTD: I can not for the life of me make a pie crust. I have tried more than a few times and it just eludes me. I would love to be able to bang one out but until someone shows me I will stick with the Pillsbury crust from the refrigerator section in the super market. But don't tell they all think I hand make them. LOL

Accountability: I had a sugar free Russel Stover's Caramel, and a no bake keto cookie.

TSS: 2 years 5 Month 29 day 134 (lowest 130.8)

CB: Dark roast coffee with SF ID Caramel Macchiato w/Miralax and Fiber

MS: Oikos Blueberry triple zero Greek yogurt, fresh strawberries, cherries, blueberries

CB2: Dark roast coffee with SF ID Caramel Macchiato

L: Crock pot pizza and poor man ceviche

D: Grilled meat loaf and barley and lentil pea mix .

"easy as pie" is a joke - crusts can be tough! I mostly do graham cracker or ginger snap crusts now, depending on the type of pie. Those are super easy. Or if it's a type of pie that really doesn't work with that, then I'll just buy a crust most of the time!

I made my own pie crusts until MIL told me she had stopped and was using refrigerated ones. And SHE stopped making them because she found out that her mother (upper 80s at the time) has started using the refrigerated crusts (probably one of the first converts)!
