What's on your Thursday Menu, RNYers?

Hey, I found the casserole recipe on the front page of OH a week or so ago, but I made it my own, anyway... Since I didn't have chicken breasts, I just took canned chicken, mixed it with LF cream cheese, lite shredded cheese, chopped green onions and sliced jalapeños. I baked in in a casserole dish to melt the cheese. It's a lot like the Keto Crack Chicken we all used to make in the Instant Pot when it was all the rage, but I think it's even better with the jalapeño flavor.
I haven't tried the crunchies! They were actually on my list when I was at TJs a few weeks ago, but it was my first socially distanced grocery trip and I didn't get 1/2 the things on my list because it was such a stressful trip...

Good morning... MIA again due to covid19 stress and trying to prep to re-open our business. What a frustrating experience! They want us to be ready to re-open hair salons by mid-May here, yet everything is out of stock, and the things I had the foresight to order a couple weeks ago is taking FOREVER to arrive. Been stress eating and the scale is up even more. Ugh... Back on track today. At least this is ONE thing I can control!
QOTD: Mine is the other way around. I HATE the smell of cucumber (heave!) but enjoy eating it a lot... Herbal tea always smells divine but I always feel a bit let down by the flavour.
Meal plan:
- Green smoothie - kale, apple, ginger, blueberries, ginger, lemon, coconut milk beverage
- Refried bean bowl topped with avocado & salsa (post op puree favourite that I still eat!)
- Salad - mixed greens, avocado, chicken, pumpkin seeds, dried cranberries, pickled red onion, bell pepper, olive oil, balsamic vinegar
- Homemade soup - bone broth, ACV, chicken, chorizo, broccoli, cauliflower, tomato, spices
- Snacks - veggies stick with hummus, 1 oz home roasted pecans (trying a fat free recipe) and 1 oz raw cashews

QOTD- Coffee, especially fresh ground smells heavenly. So why can't it taste as good as it smells? I still drink it though.
I went into the office to pick up some files and look at some old As-Builts, plus get my new email set up etc. It's so quiet there, and I think I'm going to start going back in at least a couple of days a week.
I called to get a referral for a mammogram, I was supposed to have had one back in November. And my doctor did do a referral but no one notified me. It's still good and when I called into schedule they had an opening tomorrow. So I took it, at least it's much easier to schedule right now. A mask is required, and they will provide one if I don't have one, and they had to do all the screening questions....
I need to get my lawn mowed, and then it's to the barn. It's a beautiful day!

Sometimes we just get stuck in the mire and with non of the usual distractions, it?s harder to get out. I hope your unusual activities/trainings helped!!

Breakfast: protein pancake with 1 scrambled egg
Snack: small salad with a few carrots, a sprinkle of cheese and italian dressing
Lunch: chicken salad with 1 TBS of olive oil Mayo on cucumber slices
snack: string cheese
Dinner: leftover chicken from a few nights back and veggies
QOTD... I will need to think about that!!!
