What's on your Wednesday Menu, RNYers?

Happy HUMP DAY, kids! How's it going? I am in sort of a funk this week. I am sleeping fine, but for some reason I keep waking up feeling tired and unrested...work has been slow and boring... and I can't get my weight to budge (it's not a secret why!). Nothing is really wrong, I just feel generally sort of "blah". But on Wednesdays I have back to back meetings all day, so hopefully having some time with coworkers will lift my spirits!

Accountability: More blah. I didn't do any exercise except for a quick walk, and ruined my points by having treats after dinner. I still have 20 roll over points, so hopefully I can recover this week and end it down a little on weigh in day (Saturday).

QOTD: How do you like your eggs prepared? I like mine scrambled, unless I am having them with toast--then I like them sunny side up!

Morning! I had a busy, productive day yesterday and today will be back-to-back meetings for me too. The only downside to a busy week this week is that it's also finals week and I have two papers to write by the end of the day on Friday. I normally take some work hours to work on them but I haven't had a moment to do that this week.

QOTD: I like mine scrambled for the most part. I have morphed through different eggs since surgery. Before surgery I almost exclusively ate my eggs over easy with a side of toast. But, since I rarely eat toast, I normally either have an omelet or simply crack the egg over the other things I'm having for breakfast and mix it in. I've been cracking an egg over diced breakfast sausage and cubed sweet potatoes with Cumin, Cinnamon, and Cayenne. It's delicious and filling! I roast the sweet potato ahead of time and one potato gets me at least 3 breakfasts.

My Food:

  • Coffee w/ Cream x2
  • Eggs and Corned Beef Hash
  • Turkey, Cheese, Avocado
  • Hotdog and Veggies (it's Kid #1's night to cook, she'll make rice or noodles)

That breakfast sounds delicious, Erin! I might have to have hubby pick up a sweet potato for me.

Cinnamon really? Hmmm. If you like that you should try it on your burger. I make the patty and put a generous amount of cinnamon sprinkled on the outside and grill it. Sounds crazy but it works. I had a friend win a burger contest with this concoction so I tried it and it is actually great.

Don't lie! You aren't as picky as that... I have also seen you have them baked into breads, brownies and cakes!

I am so glad to hear someone else feels like that. They are OK in pancakes and muffins too.

Good morning all! Super quick post before I start work. Accountability was pretty darn good yesterday and my fluid intake was decent. Weight is slowly coming down and I mean slowly. I'll take it though! Been having some very weird dreams lately. Half the time I don't remember what they were about though. I know I could use a couple more hours of sleep this morning.

QOTD: Scrambled or over medium or over hard. I have never liked my yolk super runny. Just grosses me out for some reason. Growing up my dad was always the breakfast cook. Him and I both like our eggs the same...with the yolks almost completely cooked. He'd always cook mine perfectly. My mom prefers hers extra runny. I could always tell when my mom cooked breakfast as the yolks would always still be runny.

Good morning! I hope your interaction with co-workers lifts your spirits. We have an online coffee today. Some of the people on it NEVER go out so I think that they need this interaction more than others.

A piece of uplifting news which is not FB ready (not fully announced yet): My nephew and his fiancé are having a baby boy on November 1! SIL and I had been worried that we would never be grandparents and now she is going to be a Nana.

QOTD: I like my eggs scrambled with additions such as peppers and cheese or sunny side up. Oh or Eggs Benedict...

TSS: 4 years, 1 month

B: Coffee! Eggs, black beans, cheese and salsa

L: Sliced Ever Roast chicken and laughing cow cheese

D: Leftover chicken parm and zoodles

S: bean salad, blueberry lemon yogurt pie and/or WW one point blueberry muffin
