Baking question-
That sounds like a good choice! I am also concerned with "dumping". I am only 4 weeks post op so I am not really eating any baked goods right now but I would still like to try some things out for the family.
I have read a lot of posts that warn of to much sugar causing dumping and in turn dumping makes you want to die! :)
So that being said Whey Low won't cause that?
It could it just depends if you dum*****t.
But I suggest do not do anything outside your surgeons suggestions when it comes to meal plans until your at least 9 months to a year out. You really need to use this time to maximize the amount of weight you can loose. After that grace period it gets a lot harder. You don't want to look back at these next 9 months and say I wish I would have.

Another vote for swerve. I bake a lot (honestly, I mostly just make full sugar stuff now, as I'm 3.5 years out and I don't have problems with eating ALL THE THINGS when I bake). But, if I want to have a full size piece of something (like with a quick cheese cake, or something) I will use swerve because the volume and consistency is the most like sugar and it doesn't have associated GI issues.
