What's on your Sunday Menu, RNYers?

Morning everyone, Happy Sunday!
Yesterday was so nice out--60+degrees & sunny. I went for a nice 3.5 mile walk and got to see lots of trees starting to bloom. This has been the coldest, dreariest spring, and I haven't been able to get out at all. See below for a pretty pics of my walk :) We are back to a week of rain and cold again. The forecast says we won't have a nice day like that again until May 4th. Ahh Spring!
Other than that, it was a pretty boring day... I did some cooking and crafting. That's the plan again, today, I guess. Maybe some napping, too, because Grim and I have both been awake since 3am for no good reason!
Accountability: One cookie, but otherwise exactly as planned. I stayed under my points.
QOTD: What is your favorite cheeses? Ahh, they are all my favorites, but I guess my top 3 are Swiss, Brie & very Sharp Cheddar.

Havarti, blue cheese, and fresh mozzarella. I make a lot of caprese salads and my version of Panera Fuji Apple Chicken salad.
We had a beautiful day yesterday with bright sunshine and close to 70 degrees in the afternoon. I spent it mowing grass. Because of all the rain some of the grass was really high and getting it cut and cleaned up was a workout. I forgot how heavy a lawn mower bag of grass is. It is raining today and I have a clean and organize project for my office.
Today I am making stuffed peppers since I managed to get some ground beef and green peppers this week. Meals depend on what actually shows up in my Instacart and curbside grocery orders. I never saw the need to have a separate freezer, but the one on my refrigerator is packed to the brim. I need to use up some of my stockpile before I buy more.
My exercise today will consist of many trips from the main floor to the basement and a session on the treadmill. I considered getting rid of the treadmill for a while because I was doing my walking in bad weather at Walmart or the mall. I am glad I kept the treadmill now.

We have an extra fridge but don't want to spend money on the electricity to keep in running if we don't have to, and we don't really need it. We own an empty triple decker house down the street that Grim has been renovating, and there are a few empty freezers, there. I need to load up the things that are taking up space but I don't need to access every day and bring them over to the other house, because right now when we open the freezer it's so full, that things jump out when we open it!
I love the Panera salad--it's my favorite! Would you share your recipe?

This is the recipe I started with. It included three tablespoons of honey. I use three tablespoons of Splenda instead. The dried apple chips are in the produce department. If I have dried cranberries I might add them, but usually do not. I also don't toast the pecans, just use them straight out of the bag. I make the dressing and keep in the fridge, I put a container of sliced red onions and a container of sliced chicken breast in the refrigerator and this is quick and easy to throw together for a lunch.
I loved the salad so much I was making several trips to Panera a week, just for the salad. I finally decided to make my own at home for much less than the cost of buying it there. And at home there is no tempting bread on the side.

My freezer had gotten more full than it should have been. Since we are hoping to leave in 2.5 weeks, we are eating out of the freezer right now. Luckily food is plentiful in the stores here in case we need to buy more.

I miss New England, but not the yucky springs. They seem to have been cold and wet most years. But those pictures are lovely and boy do I miss walking next to the ocean! May 14!
Justice had his first ride on Elmo yesterday. At first he did his Chihuahua shaking but then settled down and enjoyed the views and the breeze. Today we will probably ride again at some point and at 12:30 I have a zoom with my kids.
QOTD: My favorite regular is probably sharp cheddar especially when aged for a fair amount of time. But Beechers Flagship cheese from Seattle is a special favorite! It is cheddar-like and has little tiny crystals in it. Their description is "Flagship is a semi-hard cow's milk cheese with a uniquely robust, nutty flavor. It is carefully aged for 15 months to fully develop its complex flavor and ever-so-slight crumble." I can't get it on the East coast, but I used to travel to Seattle every six months and would bring a large quantity home. My bag was always inspected - it probably looked like plastic explosives LOL. Another newer favorite is one my son gets a lot: Humboldt Fog from California which is an aged goat milk cheese.

You can get the Humboldt Fog in Massachusetts - Even some grocery stores have it in their specialty cheese sections. The Beechers can be purchased online, but the shipping cost is as much as the cost of the cheese!

I just checked Beechers. 28 oz would be $39.60 plus $19.99 shipping. If you order $100 worth it is free shipping (so if you bought with some other people or use as gifts during the holidays it isn't so bad). Hmmm..."food" for thought...
