What's on your Monday Menu, RNYers?
well I just accidentally deleted everything i typed already so here's take 2- LOL.
My weekend had its ups and downs...I had to venture to the grocery store for essentials which was very anxiety inducing...Aldi wasnt bad but I had to go to walmart for a few things they dont carry and that was kind of crazy with all their signs, and only one door open and flags everywhere, etc...glad I shouldnt need to go back there again for a couple weeks hopefully.
I am pretty sure I ate all the snacks in the universe on Saturday when it was cold and windy all day. I baked all day and it was probably a poor decision because the banana bread is already 2/3 gone along with about a dozen chocolate chip cookies that I made "for story" lol...but at least yesterday was gorgeous weather wise, so we spent a lot of time outside. We decorated the driveway with some lovely pictures and used a nice chunk of the sidewalk chalk I've been stock piling over the last 10 years or so lol...
Story wanted to go on "the longest walk we ever went on before'" and we did...it was at least 5 miles, and we brought some chalk along with us to make a fun little chalk obstacle course on this path that leads around a small pond a few miles from our house. we had fun but I barely got her back home LOL...had to piggy back her a few times because she kept whining her legs were too tired haha.
We both slept reallllly hard last night...I think I was asleep by 9pm.
Back to working from home today which honestly has been super quiet and pretty easy due to low patient volumes and its kind of just making me sleepy.
QOTD: I wanted to be a fashion designer since age 8 or 9, which obviously never happened but I am seriously considering pursuing personal stylist training.
I always wanted to be an artist as a kid...I went to art school and I consider myself an artist now, but I don't make a steady living at it.
I am not a good business person and have never been good at selling myself. I know I am talented but I have never been super confident and only recently have really understood the value of my skills and that they are something people will pay good money for.
I never had any interest in healthcare even with my mom being a nurse, which is actually how I got my foot in the door at my first related job- out of college, I got a job in the medical office of the doctor she worked for and since then I've had multiple medical reception jobs and it's evolved into my current position in medical insurance pre-cert, and now I am the department manager. honestly I kind of hate my job. I am good at it but I really do not enjoy anything about it. This pandemic is making me more and more introspective and when this is all over I am really going to start considering new career options.
Morning: Small pot of coffee w/ sf vanilla creamer
B: slice of low carb banana bread w/olive oil butter spread
MS: apple
L: Chipotle honey chicken taco on low carb tortilla (I think Trish posted this recipe last week?)--OMFG These were the BEST thing I have eaten in like YEARS. I added extra lime juice and some cilantro but otherwise the recipe was perfection!!-made this saturday for dinner and have a bunch of leftovers still.
D: cheesy ranch Chicken and cauliflower
ES: probably yogurt and granola, maybe a protein bar
As long as it doesn't rain this afternoon, will take story for another nice long walk after I log out of my work stuff...otherwise it'll be some more family friendly youtube workout videos lol.
