What's on your Monday Menu, RNYers?

Funny story about flammable nuts. One of my roommates was banned from cooking after she started a fire making a frozen pizza. A couple weeks later, we were having a get together and she was assigned to make the salad (we thought it would be safe). We lived in a tri level townhouse, I'm down in the basement in my room, our 3rd roommate is upstairs in her room and Betsy is in the kitchen making salad. Suddenly the smoke detectors start blaring - Kristen rushes down stairs, I run upstairs just in time for us both to see Betsy run out of the house.
She decided to toast some nuts for her salad, on the top rack of the oven on broil, and they started on fire/turned into charcoal.
She still gets grief for starting a fire making a salad and it's been 20 years.

I have set more than my fair share of kitchen fires but "toasting" almonds for a salad was the only time the fire department showed up!

Good morning...or just morning...
I mean, how is Monday different than any other day?
I am feeling pretty blah and just ugh. I made the mistake of watching NBC Nightly News last night after detoxing from news over the weekend, and realized we are either going to die this week, or, if we don't, we will be out of fresh fruits and veggies. So I was at the grocery at 6:50 am and we are all stocked up to hunker down for 7-10 days. Everyone at the store looked like they were about to rob a bank.
Today we start true distance learning...we have had the kids doing workbooks but they have online content, calls with teachers, and things due. It's going to be rough. Ethan has Aspergers so he requires a TON of hand-holding and so that's going to be my second job this week.
QOTD: Nope, not at all. I don't know what I thought I was going to be, but in my mind, I wasn't going to "work for the man". Who I thought I would work for, I have no idea. But I work in Marketing for a technology company and I love what I do.
B: Boars Head (got a pound this morning yay!) + goat cheese + mashed avocado
L: Leftover chicken breast and salmon that Kris grilled
D: We have leftover chicken sausage and I am going to serve it with some of my homemade ricotta gnocchi, and either a pesto sauce or maybe tomato sauce
E: Another hour long bike ride with the kids - the weather is glorious!
Have a fabulous day, everyone!

Every time I try to no****ch the news, someone sends me a headline. They are never good headlines. I did go and read the transcript of the Queen's speech, it made me a bit teary eyed which is better than some other transcripts which make me incandescent with rage, lol.
good luck with the home schooling, I am in awe of everyone doing that along with anything else!
