Use a stick blender to froth your eggs and baking powder before adding the cheese and flour the frotheir the crunchier.
Here is a photo of my blueberry ones I love. I cook them 6-7 minutes
Blueberry Chaffle Ingredients

Ingredients
- 1 cup of mozzarella cheese
- 2 tablespoons almond flour
- 1 tsp baking powder
- 2 eggs
- 1 tsp cinnamon
- 2 tsp of Swerve
- 3 tablespoon blueberries
How to Make Blueberry Chaffles
Heat up your Dash mini waffle maker.
In a mixing bowl add the mozzarella cheese, almond flour, baking powder, eggs, cinnamon, swerve and blueberries. Mix well so all the ingredients are mixed together.
Spray your mini waffle maker with non stick cooking spray.
Add in a little bit less then 1/4 a cup of blueberry keto waffle batter.
Close the lid and cook the chaffle for 3-5 minutes. Check it at the 3 minute mark to see if it is crispy and brown. If it is not or it sticks to the top of the waffle machine close the lid and cook for 1-2 minutes longer.

Good Wednesday morning. I only know it's today because I have an appointment with my psychologist on zoom in a little less than an hour.
i really overdid it yesterday physically. I hurt all night and couldn't get comfortable. Most of the pain was in my extreme lower back and hips. Oh and my left leg can't be left out.
I'm going to be taking an extra Tylenol 3 after my appointment wraps up. Just not feeling it today...would of rather stayed in bed if it didn't hurt to do so lol

Good Morning JB and Menuers,
I am hoping for a slow day here at work considering we have no PPE's in stock and won't know till after 1:00 Pm if anything new came in. I plan to actually go to the grocery at lunch because I am on my last bottle of Id Caramel Macchiato and I have the FORO. I got about 12 items on the list so it should be a quick in and out.
I still do not know anyone with the virus but I do see it coming as the days go by. It is crazy how this is spreading. I guess we were always warned but never believed it.
My mom is a healthy 81 but I still worry about her. I don't know if she gets the seriousness of what is going on. Also she was super active she would do curves 5x a week was on 2 bowling leagues and she would play Euchre every Wednesday evening. I am afraid the isolation is going to get her depressed. I told her to go out and walk 2x a day just up and down the street so she doesn't lose muscle mass but I don't know how much she is actually doing.
QOTD: I definitely miss anybody at the gym. Even if I do not know them I always felt like "hey that guy or gal made it again WTG." I cheer them on from a distance And we have a favorite restaurant that we have been going to for the past year and it is super busy and even if we forget to call ahead when they see us they make sure we have a seat even if it is at the bar they always have our backs. So we miss everyone there for sure. I am hoping they make it through this storm it will suck to lose them.
Accountability: OK I got on that damn treadmill for 1/2 hour and 2 miles. I hate it but I did it. Then I did have a keto cookie I really did not need.

Water and vitamins: On track. I take a Bariatric advantage Ultra multi w/iron I use bariatric advantage Calcium chews and my blood work has been good. My B12 has been High so I cut my sublingual to every 3rd or 4th day. And I have now added 500mg of Magnesium
Exercise: I will get in a walk weather permitting.

Hello menu friends!
I did not start off today great with my breakfast choice (cold pizza) so I am going to try to stick to the rest of my menu today.
I did not get my car key yesterday...I did manage to get the car to the dealership but couldn't actually go there to sign forms and show my title and ID until I logged out of work at 4pm, and since they closed at 6pm they said they wouldn't have time to get to it until this morning. I asked them to please try to get it done before 10am since DH has to start working at noon and I need him to drive me there to get it...Hoping to just log out for "lunch" for about 30 minutes to get this done...its already 9 so I am waiting impatiently for the phone call.
I've found some kid/family workout videos on youTube and Story is really into the cosmic kids yoga. The instructor is very engaging for young kids and she seriously will do the whole 30 minute video...these kid videos are no joke, they definitely get my blood pumping too lol...I don't really love doing it but it's good for us both.
Maybe we can go for another nice long walk today after I am done working (I will leave my keys home this time!).
QOTD: I can't really think of anyone...honestly, I don't have building security or a regular attendant I see daily anywhere...I normally just get up, go to work and come home...

Good QOTD! I miss the cafeteria checkout clerk who I have a salad price guessing contest with everyday at the office. It's a big ritual where we have to reset the scale and make sure it's at zero (people fyi, just saying it is seldom at zero when I walk up - you should check). If it's dirty I make her give me a wipe.... My average price range is $1.19 to $2.30 and it has to be within a penny to win. People think one of us won the lotto when it happens. Oh, how I miss that simple activity. I guess I'll say it, I miss the cute girl on the floor that makes me wish I was twenty-five again. So cute and really sweet. We end up at the ice machine every morning and she always says good morning with such a nice smile. I never really thought how much i'd miss that simple and innocent excitement ha. What's really weird about what's going on, is that I have a new employee starting in three weeks and I'll have to do that now remotely. So flippin strange what's going on. Who thought going to Walmart would be a threat to your life. My wife is going today because she needs some baking supplies. I'm actually a little scared for her to bring something back with her and one of us getting terribly ill.
I'm holding steady, therapist and I talked about cutting back a little of the unplanned snacks. The deal is I have to lay out my day and I can have two snacks - one healthy and one treat under 150 calories (but only planned treats). Sounds like what we should be doing normally - huh? Today is my 30th wedding anniversary and I might have to run to Walgreen's to get a gift after my doctor appointment. We told each other we'd do a more formal thing after this ends (including gifts), but I thought I'd get her something that looked like the snugly wrap in the picture as an I'm thinking about you joke gift. We are ordering in from our local farm to table restaurant tonight, so that will be nice. I'll get a favorite desert for my wife and have a spoon or two of it (my 150 cal planned treat).

D - Anchor marinated skirt steak with mushrooms (yum) and some mixed beans side from Praire Grass Cafe
S - 1/4 of banana cream pie (it's a small piece so that's about 2 forks) - wife's fav desert from the restaurant
HW 510 / SW 424/ GW 175 (stretch goal to get 10 under) / CW 160 (I'm near the charts ideal weight - wonder if I can stay here)
