OMG a crunchy cheese bowl is MY spirit animal! Thank you for the awesome idea!!!! I did NOT think about baking these things.

ETA: I know, I myself would go tomorrow, but am I a total a-hole to bring 3 kids and 2 old people??? And will his ex even allow them to go?

I am going to hold tight for another week or so. I hope the warnings get fewer and fewer, though I fear it will actually be a global pandemic in a few days. At which point there is no harm in traveling, if it's everywhere, right?!

I CERTAINLY don't think you are an a-hole for wanting to have an awesome family vacation that you planned and paid for! But since you don't have insurance, there really isn't anything you can do except for wai****ch and hope things get a lot better, faster, anyway. But... I don't think that if it becomes a global pandemic you are going anywhere. Nice try, tho ;)

Hmmm but if it is a global pandemic, aren't we as safe in Italy as we are in the US? ;) That's what I tell myself, anyway! I am dying inside that we might not get to take this trip. Fingers crossed...

I planned a trip to Italy for mid-May and I'm still planning on going. This could all potentially blow over by then - or it could be everywhere so it isn't going to matter anymore where you travel. All we can do is wait and see. The mortality rate on it is still 3% - mostly elderly people and people with compromised immune systems. Neither one describes me. SARS didn't last forever - neither did H1N1. In fact, I remember everyone being super panicked about H1N1. I ended up getting it - but it was more like a bad case of the flu. I think the percentage of people dying from that wasn't all that high, either - but that's all you heard about for weeks on the news....all these people who were dying.

but that's neither here nor there. As long as the State Dept or CDC or whatever doesn't stop me from going, I'm going.

Good morning, and Happy Taco Tuesday!

QOTD - I do some journaling now, but I find that sometimes it becomes painful and I cringe reading it later so mostly I write poems that allow me to get things out.

Breakfast - Fasting until noon, so hot tea/Topo Chico

Lunch - up in the air, having lunch with my step-kid's mom, so we need to pick a place! Something vegan for me, which usually means veggies, pasta, or grains or salad depending on the restaurant.

Snack - Fruit smoothie, frozen frui****er, oat milk, chia seeds and hemp protein powder

Dinner - Lil John snack sized veggie sandwich with guacamole, no cheese. It's the perfect size.

I love that you meet your step-kids' mom for lunch! I see so many fractured families and the best thing for the kids is parents who can adult together! So I commend you :)

Thanks for the food ideas for the chicken! They are all good ones! I love Mexican so maybe a low carb quesadilla or nachos (light on the chips) is the way to go!

Thank you! I've been married to their dad almost 4 years, and been together for 7 years. His son is 15, daughter is 11. They are beautiful, wonderful children, and I feel lucky to be part of their lives. I came way after divorce, and she is remarried with a toddler as well. We have always been cordial and kind, but this past year was something else for us (as an entire family) and it brought us closer. I even went to her annual "Galentines" party this year. Way out of my element, as it was all her friends and not anyone I knew (except for my stepdaughter). It worked out great, met some new ladies and enjoyed an evening of no men!

That is AMAZING. I have three steps myself, and they are my favorite people in the world. I also feel very fortunate. Sadly, their parents despise each other, so there is very little chance I will be attending her Galentine's party :( I think once the kids are older and the complication of him paying child support to someone who doesn't prioritize the kids for it and has them in an awful town/school system is behind us, maybe it will be more cordial. Fingers crossed...

Glad to hear your job is moving in a fun direction for you. Hope you don't have to deal with the tantrum guy at any of these schools though. I am surprised Grim doesn't like Veggies, I bought a bag of Green Giant Cauliflower hash browns this weekend I want to try out tonight. I didn't really look at the macros when I bought them but if all else fails I'll feed them to DH.

QOTD: Just food diary but never anything about my crazy life.

Accountability: Great the only snacks I had was 2 grape tomatoes and a blackberry

TSS: 2 years 2 Month 14 days 136.6 (lowest 130.8)

CB: Dark roast coffee with SF ID Caramel Macchiato w/Miralax and Fiber

MS: Oikos Triple zero Apple cinnamon and Berries with homemade fruit dip

L: 2 turkey meatballs grape tomatoes, and single serve Aldi humus

D: crack chicken quesadilla and cauliflower has browns.

Water and vitamins: On track. I take a Bariatric advantage Ultra multi w/iron I use bariatric advantage Calcium chews and my blood work has been good. My B12 has been High so I cut my sublingual to every 3rd or 4th day. And I have now added 500mg of Magnesium

Exercise: 30 Minute elliptical I crused this yesterday I usually got 3.5 miles yesterday I went 4

I make my own cauliflower hash browns. I make half the recipe (6 round browns) and have two as a serving. They freeze well.
