Good Morning Karen, Miss Lily and Menuers,
It is cold here in Pittsburgh today. Just seems like the norm across the board here it is 19° but should warm up tp about 28°. We still have not seen enough snow this winter to have to shovel so I'll not complain about the cold.
QOTD: I was given a recipe the the other day for Keto cinnamon rolls that has Xanthan gum. The recipe is low carb and almond flour free so I wanted to try it. The cinnamon rolls I made Sunday had 2 cups of almond flour and were very heavy and doughy. I still have a problem with throwing food away so last night I stuck one in the waffle iron to thin it out and get it crunchy and is was way better than it was on Sunday. I think the SF syrup helped. So that brings me to the Waffle iron and I have to say chaffles are my new favorite go to. They are so versityl. There are so many different ones I don't think I will get through all the ones I want to try. Has anyone did the Wonder bread chaffle? I have been craving a grilled ham and cheese so I was going to give it a try.

QOTD: 1/2 & 1/2 added to a recipe can be just as flavorful as cream(although not quite as thick). I made a recipe that I found on Pinterest this weekend called Marry Me Chicken and it is delicious!

I am feeling somewhat defeated today. My son had packed his things to go to rehab yesterday so I thought he was ready to go. When I went to tell him time to go he said no and asked what could they do for him he couldn't do for himself. No amount of convincing helped. His glasses have needed replacing for a long time but instead of buying new ones, he bought Vodka. Today they broke. He had some money but not enough to pay for them so I took him to get new ones. He can't see distance without them.
QOTD: I'm really liking the chaffles. I have a whole page of suggestions for them. They are filling and so easy to make. I would like them a little more crispy.
