What's on your Tuesday Menu, RNYers?
Good morning all! Oh how I wish I was still on vacation! Right about now we'd all be getting dressed and ready to go downstairs to the hotel restaurant for breakfast. I swear they had the best scrambled eggs! So light and fluffy! Instead I'm getting ready for work and still have this darn cold. Ugh
QOTD: I've had a few family members say they thought I was my cousin at first glance. (We both have curly red hair....she's just always been the tall and skinny one and me the short and fat one). Also the other day my cousin was commenting on how great I looked and asked me what my goal was? When I told her I wanted to at least get under 200 pounds and go from there, she commented "you mean you aren't below 200 already? Because you couldn't tell it" Nope, not quite! Also being able to do all the walking and climbing up and down all the flights of stairs while on vacation and not getting the least bit winded.
B: premier shake
B2: coffee w/Splenda
L: turkey and cheese roll up
D: leftover steak and shrimp I brought back from the trip I couldn't finish.

Fluffy scrambled eggs are so dreamy, right? We had the best eggs ever at this hotel in Stockholm, and when I got home I looked up the recipe, and it basically involves half eggs and half cream cheese and some cream, some salt and pepper, and then cooked over the lowest flame ever. Too decadent for him, but that's apparently how the magic happens!
Even without cream cheese the key is low heat and do not scramble too hard. And add an extra egg white.

So jealous of the scrambled egg eaters. When I was a kid my dad would make them with brick cheese which is really creamy and buttery and he'd put Mayo on them. I miss that. I can eat eggs don't get me wrong. Souse vide, over easy, hard boiled even the Jimmy Dean egg-wich no problems but I can not get a scrambled egg down. I have even tried the frittatas that you make in the muffin pan and I can't do it. Everyone I know who has had WLS has that one thing that won't go down. My one friend it's barbecue and my brother it is shrimp I'm glad I am not them.
Also I been checking out your ticker and you are doing great. Glad to hear you have such a supportive family. You got this girl.

I remember people telling me I did not need to lose more weight and I was still over 200lbs. Nope. Do not care how tall I am I do not need to be over 200 lbs.

That is MY kind of sushi,JB! Had a busy day at work yesterday but have a fun hardworking group of volunteers so that was good. Today will be busy too as a shipment of food bicycles, school and hospital supplies will be going out to Guatemala this morning. I'll try to get a picture of the packed truck. One thing I love about the job is talking with the volunteers who come from all around the country and pay money to stay and work here. Many come with a church group and stay from a day to a whole week. Lots of interesting people from all walks of life. And all with servants hearts. Miss Lily and I will head out a bit after 6 for our first long walk and will do 2 more later . Accountability was perfect food and stepwise yesterday although I changed up supper and had a small piece of taco pizza and 4 bites of salad with ranch. Ate the proper amount of food at a buffet so I consider that a win. Weight today is 121.2. QOTD it boggles my mind that I can comfortably wear winter clothes from 7 years ago. That NEVER happened pre WLS. Here's the food plan for the day B 1 protein pancakes with sugar free syrup L 4 oz turkey meatballs D 4oz burger no bun from last night S if needed L&F yogurt shared with Miss Lily of course. Have a great day full of healthy choices everyone!
