What's on your (PHOTO) Friday Menu, RNYers?
At almost six years out, chicken is STILL iffy for me! It's very dense and can sit like lead. I have switched from chicken breast to chicken thigh which is much easier on my stomach. I also tend to use sauces and like pesto or indian sauces or even just lemon and garlic and a little mustard. Dry chicken = stuck and with the foamier.
I also make really delicious chicken meatballs and stick a tiny piece of spicy havarti in the middle. I mix up ground chicken with a little bread crumbs, eggs, spices, whatever is on hand really...and then pan sautéed them up and freeze them in bags of 4. I can pop a bag out for a quick meal.
I hope you can tolerate it at some point!

Hi everyone! It's been a long week, TGIF for sure!! I have a busy but good weekend ahead, Monet exhibit and lunch with friends tomorrow (going to a place that specializes in cheese and meats) and then Sunday I have Pilates and lunch with my mom at my favorite salad place. I have become someone that has a favorite salad place;-)
qotd - can I just say pizza? Deep dish and thin, that's two things!!
i will need to go to the grocery store, all I have here are yogurt, nuts and a protein bar. So until I wrap up work my menu is yogurt, protein bar, coffee with cafe latte PP. I had bits on the plane yesterday so will not be having them today.
