G'morning Everybody,
JB - sorry for your malady. Stay home and make Chaffles and report back on your favorites. I tried a couple but honestly wasn't that impressed with my creations.
QOTD: one of my BFF, Francesca, met her during undergrad. We both got selected for an Erasmus project (it's very much like semester abroad program here but it?s more like a scholarship offer) and spent a year in Madrid together. She was as wild and as entertaining as Madrid?s night life and we had a blast that year, trying to party and keeping our grades up. To this day when we get together we reminiscent about Madrid and the boys! ;^)
Accountability: spot on, trying to get back to 140 before OH conference.
My meals for the day:
- Coffee, coffee, and more coffee
- Tuna + hb eggs
- Some sort of chicken dish- don't know what yet
- parm cheese or Greek yogurt

Chaffle update #1
- Chocolate Chaffle: C+
I sort of improvised from a few recipes and didn't get the amounts just right. It's too dry and not sweet enough, but it's almost there.
I used:
- 1 egg
- 2 tbsp cream cheese
- 1 tbsp cacao powder
- 1 tbsp erythritol
- 2 tbsp coconut flour
Next time I will increase the cream cheese and reduce the coconut flower a bit on either end. I think the flavor will be better if it isn't as dulled by the flour.

Sounds great! I read that you can put a little extra shredded cheese straight on the waffle maker to crisp up recipes that are soft. I haven't needed to and imagine I'd use the toaster too!

QOTD: My BFF was a good friend with my Brother in High school. I live in a town of only about 20,000 and our Italian community is pretty close so most of my long time friends are either related or Italian. She is 6 years older and lives in Long Beach CA however not to often a day goes by without a text to check in. She is visiting the Holy Land with a group that Volunteers at the VA in Long beach and she just texted to let me know they l had mass in Notre Dame Chapel today.
Accountability No gym cause I made sauce out of a bushel of tomatoes and I squeezoed them so no seeds or skin. And I snacked on 2 pieces of Premier Protein fudge.
TSS 1 year 9 months 13 days 142.2 lbs ( on my way back to 140.2 after last weekends bad choices)
B: Bariatric Advantage Iced Latte w/Miralax
CB: Dark roast coffee with and SF pumpkin spice creamer and stevia

D: Keto Low Carb Pizza Grilled.
LS Gloria jeans Toffee coffee and Aldi SF French Vanilla creamer
Exercise: Elliptical 3 miles 1/2 hour.

Good morning~ I'm glad you are taking the day to get better, JB. Enjoy your chaffle making, let us know how they turn out! I still haven't tried them, maybe this weekend. I had a great day yesterday w/food and exercise. Situations always seem to pop up and make me panic a bit...I forgot about a breakfast potluck this morning for my unit. I'm thinking of a million ways out of it right now. I don't want to eat because of IF (11:30-7:30), plus there aren't any safe choices (all carb-a-licious). I will probably have a cup of coffee and leave to 'take a call'. I hate that I can't roll and stay in control.
QOTD - I've had many BFFs and I'm still friends with them all though I never see them except on FB! My current BFF would be Rob - we met online. Our first face to face meeting was at the court house. We both had an afternoon hearing so we planned to 'bump' into each other there. We went across the street for a glass of wine afterwards. Awkward and adorable!

Exercise - lap swim or cardio - depends on the weather by my gym
