What's on your Thursday Menu, RNYers?

I went over to the antiques store yesterday with my MIL. I wanted to show her that beautiful Danish teak mid-century china cabinet that would look GREAT in her dining room. She agreed it was gorgeous, but she didn't want it because the pulls on the cabinets looked a little worn. Well duh - the thing is 60 years old. I hadn't even noticed the worn areas (which are pretty microscopic, in my opinion - not even noticeable unless you have a magnifying glass, practically!). But then she's really picky and would obsess about it, so she's going to have to get something brand new. Too bad I don't have room for any more furniture in my house, or I would have bought the thing. They had a couple of really nice credenzas, buffets, and dressers that they've moved out on the floor since we were there the other day, too. Maybe I'll have to become a mid-century furniture dealer or something. Although I've heard there's not much profit anymore in being an antiques/vintage furniture dealer - and it's a lot of work. Boo.
accountability was good yesterday. I HAVE to exercise today, though. Luckily I have nothing big taking up my day for the next few days..
QOTD: our city is on an isthmus, so you basically can't go anywhere without seeing a lake (in addition to the two big ones, there are two smaller lakes within the city limits, and even more in the county once you get outside the city)

B: protein pancakes with plain Greek yogurt and a homemade fruit compote, coffee with half & half
MS: protein shake
L: half a poke bowl. Or salad with diced turkey breast.
AS: light yogurt with raspberries
D: whatever I don't have for lunch, I'll have for dinner
ex: there's a Zumba Gold class later this morning, so probably that

I put oat flour in mine because it helps a lot with the texture, so this may be more of a "maintenance stage" recipe than a weight-loss stage recipe, but here goes. Also, this makes a ton of small pancakes - like 35-40. Of course, they are best right out of the pan, but it's very convenient to keep a bunch in the fridge to eat for several days! (I usually eat three on any given day)
3 C old-fashioned oatmeal
3 scoops protein powder (I use vanilla)
2 t baking powder
whirl the above three around in a blender until the oats are flour consistency, then add the other ingredients:
1 C 2% cottage cheese (if I don't have any cottage cheese, I'll use plain 2% Greek yogurt instead)
2 eggs
enough unsweetened almond or cashew milk to get the batter to the right consistency
ground cinnamon and artificial sweetener to taste, if desired
sometimes I'll throw in a dying banana if I have one (it's not enough to affect the macros much, given this recipe makes so many pancakes) - or I'll stir in some blueberries (stir in the blueberries after you pour the batter out of the blender, though...)
I just cook them like you'd normally cook pancakes, but I use butter-flavored cooking spray in the pan
they're about 50 calories, 5 carbs, 1 fat, 4 protein each

I suck at getting on here in the mornings to update my menu, but I have been popping in to read in the evenings. Between morning chiropractor and walking, and then getting to work, my mornings are a *****aotic.
My neck and back are slowly getting back to normal, though my lower back now aches by the end of most days. I try not to sit all day (our desks can lift to standing position) and I go for walks on my lunch.
My new walking buddy is a good friend in my department who just had VSG a few weeks ago. Yesterday was her first day back to work. Things are going well for her so far. There's another lady in our department who is 6 or 7 years out from RNY, and we might sign up for a boot camp thing this fall, I'm just concerned my back will be a problem. I feel super old. I haven't been tending my garden like it deserves and I feel icky not being in my normal cardio routine.
QotD: there's a really pretty park by my house that I drive past every day, but otherwise I'm just driving through main roads of Omaha.
Breakfast: scrambled egg, dab of salsa, 1/4 avocado
lunch: salad bar (usually there's diced chicken)
snack: vanilla Greek yogurt
dinner: work outing to the zoo after-hours, not sure if our work is catering something or if we'll be eating zoo concessions. I'll make the best choice available OR maybe eat another healthy snack from the break room before heading to the zoo.

QOTD: I grew up in SoCa and I'm surprised everyday about how GREEN it here in MO! Everywhere I go it's green almost all year round, unless we have snow... (YUCK!) From my office I see green trees all day!

Good morning~ LOVE the meme!! Cheezits are are evil. Yay, It's Thursday and I have to agree the week is flying which is awesome. I'd really like the weekend to go where the wind takes me w/out any plans, but we may go to see Rob's mom who lives in Longbeach on Sunday since College football starts Saturday. The blessed first game! Rob is SO EXCITED and it's adorable. I have a loooooong meeting this morning, more project work and the gym after work - cardio and circuit, maybe some floor too.
QOTD - My drive is about 35 minutes of freeway + 25 minutes of farms and vineyards. It's beautiful and I'm in awe everyday! I love watching the sun rise over the hills through the fog and seeing the cattle and horses everywhere. Gorgeous! Even though I have 2 windows in my office they look to a parking lot and the back of another building. I am super sensitive to glare so my office has blinds and curtains on the windows and is dark-dark with only a task light. I love my cave!!
