Happy Friday Eve, what's on the menu today, RNYers?
it occurred to me the other day that if I was still working (at the university), I would be freaked out that this was my last couple of weeks of relative freedom until the madness began again (students don't come bac****il the last week in August, but we spent most of August in high gear prepping for the school year to begin). UGH. I do not miss it at all!
Taco pie is more like a lasagna I guess. One tortilla, meat, Picante sauce, cheese and then repeat. I think the pie I made had three layers. I baked it for about 20 minutes so everything could melt together. I cut the pie into eighths. I topped it with red onion, black olives and a bit of sour cream.

QOTD: Meal planning and prepping. I'm back at it but it was much easier in the beginning when I had so few choices.

I'm finding that during the week it's pretty easy to stay on track plus I only have one meal a day to share with someone. I pretty much eat the same thing for breakfast 7 days a week, you'd think I'd get bored but I think it's because I don't like to eat in the morning and this just goes down so much easier! I've been on a turkey/chicken meat kick, I've also mixed up the wraps I use. Since I'm do really low carb right now I've opted to a wrap with 1 carb vs my normal is 5. It's also food I can eat at my desk and still work. That way I can walk on my lunch hour to get my 5 miles in.
Does anyone have an easy eat at desk lunch they'd be willing to share?

I work from home now, but when I had surgery, I was in an office. I used to like little bento boxes types of lunch. I would weigh out 1 oz of deli meat, 1 oz of goat cheese, add one mini cucumber with ranch, etc. That way I had a "variety" and as messed up as this sounds, it looked like more food than a tiny tupperware of 3 oz of tuna (which always looked small but was actually a fine amount). I also would do things like a couple of ounces of ground turkey, a small pile of shredded cheese, a dollop of sour cream. It was a way to have a few different flavors!
My absolute favorite at desk lunch is tuna + hb egg. Empty the tuna pouch (not the can) and add the hb egg! Yum! The tuna pouches have all kinds of flavoring added to them. I love the hot ones like with tapatio, sriracha or jalapeño.

I should make a goal of 30 days at 30 carbs. That's a brilliant idea. Why can't I think of things like that?? Thanks for sharing.
