It's delicious if you like Brussels sprouts!

EASY Brussels Sprouts Soup Author: 2 sisters recipes Recipe type: Soup / Starter Prep time: 5 mins Cook time: 15 mins Total time: 20 mins I made into 18 servings because I eat small amounts at a time. 21 Cals, Potassium 206, Carbs 4, Fiber 1, Protein 2 Ingredients
  • 2 Tbsp. extra virgin olive oil
  • 1 medium onion- chopped
  • 2 medium carrots- chopped
  • 1 small stalk of celery- chopped
  • 1 bag of fresh Brussels sprouts (small ones) (1 pound bag, 16-ounces)
  • 3 cups low-sodium chicken or vegetable broth
  • 2 Tbsp. fresh chopped parsley
  • salt and fresh cracked pepper to taste
  • grated Parmesan cheese, for serving
Instructions
  1. Rinse and cut off ends of Brussels sprouts, discard the ends. Then place them into a medium size pot filled with 1 cup of water. Cover and bring to a boil, then simmer on a low heat for about 3 to 5 minutes, or until they are tender enough for you to easily slide a fork through one.
  2. Drain and set aside.
In the meantime:
  1. In another medium size soup pot, heat olive oil on medium heat and add the onions, carrots and celery. Sauté the veggies for about 5 minutes, stirring occasionally until they are softened.
  2. Add in brussels sprouts and stir for a minute or two, to infuse the flavor into the veggies mixture.
  3. Pour in broth and fresh chopped parsley. Cover and simmer on low heat for 6 minutes.
  4. Puree in the pot with a hand-held immersion blender, or blend in a blender in small batches at a time (or when the mixture has cooled down).
  5. Season with salt and fresh cracked pepper to taste. If the soup is too thick, stir in some water.
  6. Serve with grated Parmesan cheese at the table. Great to reheat when ready to serve.

Morning! I woke up with a bad attitude this morning and I'm trying to turn it around. I did a pre-dawn run because it's supposed to be near 90 today and the run just sucked. Every single time I had one of those runs I feel like "this is it, I'm not going to love it anymore, it's over". I keep waiting for the other shoe to drop and for me to hate moving my body like I did before surgery. I know that's not the way it is and I won't go back there, but jeez it's hard to remember that on runs like that one.

QOTD: I'd say the birthday I remember the most was my 7th because my uncle's farm burnt that night. It was directly across the road from our house. My parents put me to bed and about an hour later I woke up when my father was throwing me over the railing of our stairs and I thudded down them on my butt. It was a 12 alarm fire and burned for 5 days straight. It melted our front door and the tail lights on my parent's cars and burned the 100+-year-old maples in our yard. But, luckily did not catch our house. Pretty much the only reason it didn't was that it was torrential downpouring that night and the wind was blowing down the road instead of at our house. We lost 150 head of cattle that night and everything smelled like burnt hamburger for literally months. We had to change the carpets in our house because of it!

We sat in the back/side yard in my father's pick-up truck with my mother and three of us kids and watched it burn for hours. My sister was less than a year old. I remember my mother had to drive us to my grandparent's house to stay the night and she hadn't driven a stick shift in years.

My Food:

  • (2) Eggs, Cheese, and Sour Cream
  • TBD, I didn't have anything to bring but I will probably grab a salad next door
  • Burger w/ Veggies, I ended up having eggs last night
  • Plain yogurt w/ nuts, apple w/ PB, popcorn

I already got in my 2-mile run this morning.

1- I hear you on the working out. I was in a dry spot for a couple of weeks and last week I had 2 great workouts I felt good about and I was like 'I am back ' .... Monday is my short day and yesterday didn't get to gym until 7:30PM. It was rough at that hour. #shortbutsweet

2- Wow. That is a really rough memory. Erin you really are a warrior. You have overcome so much.

I feel ya on the running. Some runs my legs feel like they are lead.

That Birthday sounds horrible, so sorry you dealt with all that.

That would definitely be a birthday to remember. How awful but then blessed that you weren't harmed.

A couple of weeks ago when my back got so, so bad I kept walking through the pain. Everyone was telling me to rest but I was terrified to rest. I didn't strength train or run (still not running and recommended I don't for my joints sake) but I wouldn't stop walking. Every time I've had to stop exercising for illness/injury, I've been completely derailed and regained the weight and the whole 9 yards. That was my terror, that if I stopped exercising all together, I wouldn't start it back up when I felt better and then I'd regain my weight. No one could really understand the why I wouldn't stop walking. It was extremely painful but for me, extremely necessary.
