morning everyone!
I started my WLS/fashion/lifestyle blog last week and posted a new one yesterday. I am currently saving up for a nice camera and some video equipment that will allow me to start making some videos and I am really excited. I hope to be doing this by Summer!
QOTD: I am kind of embarrassed to admit it but I do not listen or read or watch the news usually...the only bits I get are from my DH or other people's word of mouth or on social media. I listen to audio books in my car 90% of the time and the rest of the time I usually am just listening to radio music...once in a while there will be a brief news story on but I am kind of oblivious to the news.
Morning: coffee w/ 1/3 caramel PP as creamer
B: slice of low carb banana bread, 1 kiwi fruit
L: chicken enchilada soup w/sour cream & shredded cheddar
AS: greek L&F yogurt (I always plan for this but rarely eat it)
D: maybe DH will actually cook the crab stuffed flounder we keep planning to make but haven't yet, or leftovers since the fridge is pretty full already.

yes! I love it too...I make it with a rotisserie chicken but you can use whatever chicken you like or have.
my approximate recipe:
1 large onion, diced,
2 poblano peppers, diced
2-3 cloves minced garlic
1 rotisserie chicken, skinned, de-boned and diced
1 Can black beans
1 can corn
1 can diced tomatoes
1 can green enchilada sauce
1-2 cups chicken broth (I like mine thick like a stew)
lots of chopped cilantro (i just usually chop up the whole bunch lol)
4 oz neufchatel cheese
2 envelopes of Goya Sazon seasoning (the one with cilantro)
1 tsp cumin
1 tbsp garlic powder
sautee onions and peppers in a pot until tender, then add the seasonings, chicken, canned ingredients and broth. simmer for about 15 minutes so flavors meld. add neufchatel cheese til melted and incorporated. add cilantro at the end.
you can make it without the cheese if you like it more brothy but I like the cheese to make it creamy.
It makes 8-10 (~1.5 Cups) servings and according to MFP it's about 250 calories per serving and 23g protein, it is 15g carbs because of the beans and corn, so It's not exactly low carb. but it is super hearty!
