Do you think it would work with lactose free milk?

according to this article, lactose free milk by itself won't work because it's ultra-pasteurized, but it WILL work if you add a culture to it (this is for cheese in general - but I would assume this would include cottage cheese):

I did some googling as well and found an article that said that cheese is low in lactose anyway because most of the lactose is in the whey (which is poured off of the curds). So potentially rinsing it well (as I did at first) might even remove essentially all the lactose. Regardless, I think you'd have to experiment to see what happens. I couldn't find any recipes specifically about using lactose free milk other than the one Trish mentions.

I'm glad - I modified my straining technique a little last time and tried to just pour the whey out of the pot holding the curds back with a spoon instead of dumping it all into the strainer. It worked well in retaining more curds. There was a bit more whey when I put it into the refrigerator but I poured off the excess after it chilled.

I'll try that next time. I was shocked by how much whey that kicked out. I lined a colander with cheese cloth and set it on top of a big Tupperware - and put the Tupperware in a big mixing bowl. I ended up with a bunch of whey on the floor when I tried dumping the whey in the sink. Yikes! Next time I'll pour some out of the whey out of the IP before I strain it.

anyway, I love the taste of that cottage cheese - can't wait to make it again!

Yes, so much better than store bought. I keep reducing the salt because it doesn't need much and store bought tastes very salty to me now.

Good morning! Very cold here too, and I'm feeling it way more than I did last year! I'm wearing a waist slimmer (nothing hardcore, just finding that my stomach skin is starting to be super muffin-toppy so I just got a thing to smooth it out some), a cami, a T-shirt, a sweater, and my winter coat and still want more layers! My winter coat is from last year and a bit large now, but I was dragging my feet about buying a smaller one. Now I'm grateful for the extra room because I can wear thicker layers lol.

today is my last day and I have an exit interview at 10:30, then they'll probably send me home. Ive noticed that IT tends to cut off system access for people early in their last day.

Qotd:I rave about my egg timer. It's a little egg shaped plastic thing that you put in your pot along with your eggs and it changes color based on the "doneness" of your boiled eggs. PERFECT boiled eggs every time, whether you want hard boiled or softer yolks.

breakfast: treated myself to an almond milksnack sF latte

i brought 2 HB eggs with me, and I'm anticipating going home before lunch. I'll have chicken chili at home.
