What's on your Thursday Menu?
morning everyone!
today is my Friday since I will be off tomorrow to get a ton of stuff done...hoping I am not over extending myself but I have my yearly physical at 8:30am, a hair appointment at 10:30 (I hope my Dr. is not running too late!), then I have to order balloons for Story's birthday party on Saturday, then go home and bake her cake, which is a complicated 3-layer rainbow checkerboard cake I am going to attempt...I hope it works out! otherwise she's getting a last-minute cake from the grocery store LOL.
needless to say I probably won't be checking in here tomorrow unless I find time while I am at the hair salon maybe.
QOTD: well we just spend all our savings on getting our kitchen plumbing fixed (we are installing a new sink in a couple of weeks when we actually have time on a Saturday)...and we have the furnace guy coming to finish fixing that tomorrow as well. I have about 20 other projects I'd love to do but obviously those will need to wait!

It's the easiest recipe ever. All I do is literally put a beef roast in the crockpot, season it generously with some italian seasonings (oregano, thyme, garlic powder, basil, salt & pepper), pour in about a cup of beef broth, and then pour a whole jar of mild giardinera (oil drained out) on top. cook on low for 12-24 hours.

Oh, I like the idea of the giardinera -- my recipe is essentially the same except I used pepperoncini but I bet the giardinera gives a rounder taste (more than just spice). I will try that the next time I make it...of course, it will be a while because I have like 6 servings in the freezer from the last time. It's so good though.

G'morning all,
It's been a busy week and I had my head down the whole time working. In the past during these kind of times I would put myself last and my eating or gym routine would go out the window. I would eat at my desk (usually chocolate bars or candies) and would just work non stop. But this year I put ME first and it felt good. I put my gym hr on the calendar as if it's a conf call so nobody schedules me for anything else. It might not seem much but I felt so proud that I didn't give into the pressure and I am coming out the other end mostly intact.
QOTD: For our main house, where we live, the only project left is the drivecway and the path through the main entry. The plan was to take care of it this year but we might have to post pone it. We have an investment property that the tenants moved out at the beginning of summer and they left the place trashed. So all summer I was getting contractors and painters to fix the house and get it ready. We finally got new tenants in Oct but that was about three months of no rent and us spending money so that's why our driveway needs to wait. I actually like house projects.

PS - I just saw the brand "real good pizza" at my safeway. Bought a couple to see how it is. Wow!! Even DS liked it. Never thought cauliflower pizza can be so good. It's either that or I haven't had pizza in 16 months and anything resembling pizza tastes good to me! I like the small personalized size, I was happy and full with half.
