AMAW/CAMAW questions
Ditto to what everyone says and try to not focus so much on a number on the scale but how you feel, what you can do. As long as you know you are keeping the protein high, carbs low (no white stuff) and moving you should be fine. But if the weight gain continues don't hesitate to reach out to your surgeon and there can in some cases be a medical reason for weight gain

Scrambled eggs will probably slide right through your pouch, they're not good at sticking around and keeping you full. Same to shrimp, as the meat is fairly soft; I see the same thing happen with shrimp and soft fish.
When you measured the ribs, did you weigh just the meat, or does 4 - 5oz include the bones? Make sure you're only counting what you eat!
