2 oz Plain cream cheese (softened at room temperature) 3 tbsp Coconut flour
2 tbsp Heavy cream (or any milk of choice)
1 tbsp Erythritol (or any sweetener)
1/2 tsp Gluten-free baking powder
1/2 tsp Vanilla extract (optional)
INSTRUCTIONS
1. Puree all ingredients in a blender until smooth. Wait a couple of minutes for the bubbles to settle and batter to thicken a little.
2. Fry pancakes in a buttered pan over medium heat, 1-2 minutes on per side. (It's time to flip when bubbles form at the edges.) Repeat as needed until all the batter is used up.

The closet I have come to and actual pizza crust is fat head pizza and my husband doesn't mind it either so it's a win win

2 cups pre shredded/grated cheese mozzarella is the best or Edam/mild cheese
3/4 cup almond meal/flour
2 tbsp cream cheese
1 egg
pinch salt to taste
1?2 tsp dried rosemary/ garlic or other flavourings optional
your choice of toppings such as pepperoni peppers, cherry tomatoes, olives, ground/mince beef, mushrooms, herbs etc
Instructions
1. Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
2. Stir then microwave on HIGH for another 30 seconds.
3. Add the egg, salt, rosemary and any other flavourings, mix gently.
4. Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
5. Make fork holes all over the pizza base to ensure it cooks evenly.
6. Slide the baking paper/parchment with the pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.
7. To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.
8. Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the
cheese. Bake again at 220C/425F for 5 minutes.
Recipe Notes
Fat Head pastry can also be made by replacing the almond meal/flour with 1/4 cup (4 tbsp) coconut flour.

I read all the FABULOUS responses, and didn't SEE this one, but forgive me, if it's a duplicate...
Its not even an ORIGINAL hack, as I "borrowed" it, from EMIEPIE, long, long ago...and have used it...and passed it on, a kajillion times, both on and off OH - even to NORMAL peeps...so sometimes I FORGET it's not MINE :)
Using cottage cheese, in place of mayo
Especially in egg salad
And using Trader's Joe "Everything but the Bagel" spice. I had never heard of it, but now I use it, at least daily, and have even given it as Christmas gifts

I never thought of cottage cheese in place of mayo. I am not a big mayo person and am of the rare variety who prefers miracle whip!

This one is hard, since I find myself not really hacking my menu and instead eating the regular versions, just fitting it in my calories.

So, a couple times I have used egg whites and one of those silicon circles to make the eggs perfectly round. Make 2-3 of those little guys, mix some plain greek yogurt with SF drink syrup like raspberry until it is of a honey consistency and drizzle it over the egg white medallions. So like pancakes kind of?
