That sounds like an awesomely healthy diet! I was a vegetarian for 5 years long ago, but not vegan - I incorporated dairy. Now I don't eat tofu, as I have hypothyroidism, and avoid soy as much as possible (it's a thyroid antagonist). But I do look forward to adding in more and varied veggies once I am in maintenance!
