What's on your Wednesday Menu RNY'ers?

Here in my area, they are on a modified year round schedule so they wenr back to school around July 20th, but then they get two weeks in October, two weeks in the spring plus the Christmas break. They usually get out for the summer last week of May or first week in June. It's interestinf scheduling for sure.

Good morning everyone! I had a crazy evening and morning. DH was rear-ended on his way home from work (he's fine but the car not so much), and I had to run him to our insurance shop for appraisal this morning and see what they do from there. He's worried they might just total it out and we'll have to buy a new vehicle, and we JUST paid off both of our cars so we can start saving up for a house next year. Sigh. I guess that's life.
My phone interview went super well, so I'm waiting to hear if I get to go to the next round, which is another phone interview with the actual hiring manager. The first one was just a recruiter.
I got a phone call from my brother (the one who had a stroke) and we talked for over an hour and laughed a lot. He's in good spirits and made a lot of jokes and talked (in very technical terms I didn't understand) about his stroke and seizure, and what he had been up to besides having a stroke. He talked about going from resident pay to full physician pay recently, and I jokingly said, "you know I'm going to expect MUCH nicer Christmas gifts now!" And he said he'd give me the absolute FINEST coal he could buy. I said "the finest coal is DIAMONDS." He paused for a moment and said, "Woah. It is. You just out-scienced me!" So now, I'll expect nothing less than the promised diamonds for Christmas ;)
qotd: I gambled exactly one time on my 18th birthday because it was legal (I think they've since moved the legal age to 21.) I spent $10, lost it, won it back, then lost it again and that was the end of it!
breakfast: coffee and Premier
lunch: Greek L&F
dinner: low-carb zucchini lasagna. I recently picked a zucchini the size of a watermelon and I think it would make lovely lasagna zoodles. In fact, the width of the zucchini might cover the whole size of the pan!
im also prepping a lot of food tonight as both DH and I have potlucks at our respective jobs, so I'm making jalapeño popper tortilla roll ups for his crew, and Swedish meatballs for mine, and since we have a couple vegans on my team, I'm also throwing together a vegan cucumber dill dip to serve with pita chips.

I was wondering if it would freeze well without being mushy later when cooked. I can definitely freeze a lot! Do you blanch it at all first or just put directly in the freezer?
