So much this. And even when I took vitamins and minerals - I still became deficient at some point in my journy. I simply was not taking enough, and I did not monitor my own numbers. I did not know any better and I trusted my docs when they told me that my numbers were ok.
Finding the hard way, that not only not everything than needed be tested was tested but that some of my number were trending down, while some were just borderline normal.
Once i got myself "educated" and started paying sttention to my leveks - I have been doing much better.
I had to find levels that were just ok, but I had to be aware of my numbers when I feel ok.
I.e. I don't feel good when my B12 drops below 800. I like my B12 to be 1000-1500.
My D,- my goal is to have it somewhere between 50-70, my iron - ferritin, my goal is to have it above 50. And so on.
Knowing your numbers and knowing how you feel while they fluctuate - is critical IMO.
Take vitamins, enough but it too much. Not enough vitamins is bad, but too much of some of them can be bad - toxic.

I still become anemic and suffer painful leg cramps when I miss my iron and magnesium for too long. I don't want to die after working so hard to LIVE!
When people say "well I don't have to take anything and my levels are fine", I always fear for their future... when they come back in five years sick, in pain, losing teeth and hair, you name it...
