What's on your menu today (PHOTO FRIDAY) RNYers?

It's Friday and it is supposed to get to 68 today (from 38 when I went out to walk this morning). I can't wait until it warms up down here (and hopefully stays that way).

We are hosting football watching and dinner on Sunday. I wanted to make a vegetable lasagne. I found some online recipes for eggplant zucchini lasagne, but wondered if any of you you had favorite versions that are tasty but not too difficult to make?

My photos are of sunsets from earlier this week. The first on Manasota Key and the other at Fort Meyers beach.

QOTD: I HOPE I'm active here on OH as it is the main reason I was able to get to goal and have stayed there for over a year. I would like to be helping others reach and stay at their goals (and give me incentive to do so as well).

1 year, 10 months post-op

B: eggs, cottage cheese and Canadian bacon

L: Tuna salad, pickles and cottage chees

D: Crab cakes and smashed cauliflower (Rachel Ray recipe - really tasty) - not eaten yesterday because I had Thai food for lunch and finished it for dinner

S: Halo Top ice cream

Good morning everyone. I have been at my friend's house the last couple days helping her unpack after her move from Seattle. No internet or cable, so I feel totally out of touch. I am home now, but am going back in a couple of hours.

This weekend I have a bday dinner for a friend tomorrow and the rest will be more unpacking. The good thing is that I am surprised at how many steps I get in. All of that running around adds up.

I cannot wait for my trip to Maui. Five day count down. I am so ready for a couple of weeks on the beach. It has been a rough few months.

Accountability: not too bad, but I had Mongolian Beef from a restaurant yesterday, and while it wasn't bad in terms of macros, it was loaded with salt and I am feeling it today. The rest is going in the trash today. Blech!

QOTD: it is certainly my plan to be here in 5 years. I know it is critical to my maintenance and my mental health to be with you guys.

My photo below is of me the Christmas before surgery, and last Christmas.

3 years + 2 months post-op:

B: 1/3 cup Mongolian Beef. Going in the trash!

S: My version of egg foo young made with egg beaters, spaghetti squash and bacon.

L: Beef barley soup. I made another pot the other day.

The rest is up in the air since I will be at my friend's house. Likely will be steak for dinner.

Have a great day everyone!
