Its so cold I let the ( Persian long-furred) cats out this morning and they were crying to get let in 20 minutes later!

So of course its time for comfort foods . Im making a meat loaf out of 2/3 very lean beef and 1/3 extra lean pork spices a few eggs for binder onions garlic breAdcrumbs and spices ... and Ive already made amazing fat free mashed potatoes with butter buds fat free half and half and a bit of kosher latke mix for extra oniony delicious taste. The meatloaf will be coated with ketchup but will be served with fat free organic gravy based on carrot purée organic beef stock and homegrown herbs - thyme marjoram savory. Maybe Ill be extra good and eat some artisanal lettuce with fat free blue cheese dressing.

Ive been trying unsuccessfully to get through the four hours of babying/ baking while adding bits of water caramelized onions require for homemade onion soup. Theoretically this should be relatively easy to keep low cal as fat free cheddar is readily available as is garlic bread ( just roast garlic cloves and spread them on the bread ) .

I also cored and sliced ( now very reasonably priced ) green apples to make crust- free apple pie. I lay them in a pie dish sprinkle with butter buds and cinnamon and apple pie spice then drop spoonfuls of apple crumble mix on top I made with fat free half and half butter buds and a bit of Splenda if it was needed. I like to add a bit of oatmeal to the mix too just cuz it tastes great and adds a bit of fiber.

yesterday I actually ran and walked ( my friend was injured so I walked with her) a 10 mile race ! Haven't run in what feels like years - zero issues with breathing or keeping up ... it felt so easy like floating ... of course I did swim almost each day for almost two weeks in Florida and danced and walked or snorkeled each day on the cruise .. but still ! I'm proud I can rock running tights and an unmade up sun screened face and still look and feel HOTT
