What's on your Sunday menu RNYers?
Good Sunday Morning Menu Peeps,
We are at home on this snowy Sunday. Our church is experiencing HVAC problems, so no services for us this week.
Have been up puttering around in the kitchen for a few hours, prepping meals for the week ahead.
QOTD: My favorite "go to" meat dish is crack chicken ... a close second is a crock pot version of peach and ginger chicken thighs (I make mine using SF peach jam). I work long hours and have a hectic commute, so it's always wonderful to have dinner ready and waiting when I get home at night.
Menu:
B: Cottage cheese
L: Last of the grilled turkey breast on a small bed of salad greens
S: Black bean hummus
D: Probably a chicken curry dish

Ohh could you share a recipe for the peach and ginger chicken? Looking for new things!

Sure ... here it is:
Slow Cooker Ginger Peach Chicken
Ingredients
- 1lb boneless, skinless chicken thighs
- 1 cup sugar free peach jam (I make my own jam every summer)
- 1 - 2 tablespoon low sodium soy sauce
- 1-inch fresh ginger root, peeled and grated
- 3 cloves garlic, peeled and minced
- One Cup thawed peaches - finely chopped
Directions
- Add chicken thighs to your slow cooker.
- In a medium-sized bowl, create sauce by adding peach jam, soy sauce, grated ginger, and minced garlic. Stir to combine.
- Spoon sauce over chicken.
- Add lid and cook on "low" setting for 3-6 hours or until the chicken shreds easily. (The cooking time will depend on the size and strength of your slow cooker).
- Shred chicken and return to slow cooker to mix with juice.
You can use chicken breast or thighs but I personally think that the thigh meat is juicier and more flavorful.

Morning RNY'ers! I've been to the gym and market, those are the only plans I had for today. I will do some more work that I brought home, vacuum and cook a ham.
Qotd: my easiest go to meat is a roast chicken. It will last me a week easy, and I don't tire of it because I can alternate between light meat, dark meat etc. since the family doesn't like leftovers, they don't eat much off of it. I don't but the premise ines at the store, I prefer to roast my own. Yesterday I made pulled bbq chicken for the 1st time- it was so easy and such a hit- it will definitely be in my regular list going forward.

m1: 1egg/egg white, 1/2can corn beef hash (seems like a whole lot but that's the actual serving size in the label).
m2: oatmeal, berries
m3: deli turkey, cheese (I may skip this- I'm not really feeling it)
m4: spiral ham, maybe some Mac & cheese, if my carbs can stay below 80g with it.

Good morning OH'ers! Ahhh, Sunday just an easy day on tap here. Walk the dogs, run some errands, do some chores, weekly prep and ending with a nice dinner, a fire and movie - the original Murder on the Orient Express tonight. Not too shabby!
QOTD - My go to meat dish is probably eggs if they count or chicken. We BBQ a lot of it and eat off it for days. We also BBQ a lot of sausage, burgers, steak and there is crock pot pork roast too - always a winner! However I am an equal opportunity meat eater - I love all of it.
Accountability - Ok - I went to GNC with my son yesterday and they were giving out the new Quest cookie. I had the chocolate chip one, it was ok, dry w/a funky aftertaste. I was able to adjust my food for the day around it. I also may have impulsively purchased a few quest protein cookies, bars and a couple bag of quest chips...for emergencies (ok ) Honestly, I love the idea of them more than the taste. I usually will take a bite or two and toss 'em due to the aftertaste...I just can't handle that part.

I haven't tried the apple pie flavor yet, but I have it in the cupboard and look forward to trying it now!
The only one I've actually liked so far is the white chocolate raspberry. It was quite good. Nicely sweet w/no after taste.

I never bothered cubing it, and I use the slow cooker. It tastes fine if you don't do the final step of putting it under the broiler, but tastes amazing if you do. Totally worth the extra step.
