Good cold morning weekenders! I hope that you are all staying warm and healthy. Part of me would love to stay in and snuggle under the covers, but I am going out for a swim in about an hour and then later for a haircut. Other than that, I want to prep some salmon and a pork loin for the week ahead.
QOTD: I make alot of salmon with just salt, paprika and lemon. Nothing fancy.
Menu:
Breakfast: hard boiled egg, 2 oz ham, 1/2 cup plain oatmeal
Snack: string cheese
Lunch: leftover Hoppin' John with turkey sausage
Snack: 2 oz turkey breast, apple
Dinner: probably pork chops, cauliflower
Exercise: hour of swimming

Good morning! It is 41 here in Florida, but going up to 70 today and warmer each subsequent day this week. At home it is minus 1 this morning (going to a high of 17). I'm going to start my strengthening activities up today, as I had to layoff for a few weeks after my latest PS.
QOTD: Probably crack slaw because it is so good. BUT I'd like to be able to make good pulled pork South Carolina style. I'm craving it!

Waiting to walk with Lily after lunch as it's supposed to be 30 then. We did get all 4 miles done outside yesterday even though it was only 12. Lily had her coat on and I found an old pair of my sons coveralls--mens L--so you can imagine how they fit my womens s or xs self. I added a carhart coat,a scarf and wool hat and it was perfect. A pair of coveralls that fit is my next clothing purchase. Accountability was good with no extra bites. Post op 5 years 4.25 months and weight at 117.6 today. Heres the food for maintenance today B 1/2 c steel cut oats with protein and peanut butter L 3 oz chicken salad sm tangerine D 1 c chili leftovers S fitjoy protein bar. Have a great day everyone and make some smart choices that move you toward your goals!

Ooohhh. I forgot about braised short-ribs (because I've never cooked them)! I have to go out to eat or have DS cook them.

Easy, easy...Dutch oven or heavy type pot. Ribs in pot, 1 packet onion soup/dip mix, minced garlic, 1/2 C wine or water, all sprinkled over top of ribs. Bake in 250*F oven for 4-5 hours. I peek every so often, turning ribs, if juices seem to be evaporating, add in 1/2 C or so of water. Sometimes for the last hour I add in raw cubed potatoes, fresh green beans, fresh brussel sprouts and/or baby carrots, making sure what ever added is coated with the pan juices. I add pepper at the end, no salt--soup mix has enough.
Edited to add: Cover tightly while in oven
Thanks for the recipe!
