What's on your Monday Menu RNYers? Gratitude Day 1
QOTD: I am grateful for being able to live the life I've always dreamed of. I was so envious of 'normal' sized people and the simple act of not having to think twice before sitting in a chair, riding a horse etc. What a burden off my brain.
We are under operation eat the freezer/fridge for the next 3 weeks because we are not taking the freezer with us to the new place. House is scheduled to close on dec 15, and no we still don't have a place to live lol. We are putting in an offer today on a little place. I think it is only about 700 square feet (2bed, 1.5 bath). this is 1/4 the size house we are in now so very crazy!
oh and the inspector is coming to review our house today. please swing some chickens he doesn't find anything major.
food for today:
egg whites
sauerkraut for gut
yogurt
leftover pork roast

I'm now down 4 lbs from my post-vacation weight and a pound under my "oh crap" level. YAY! Need to keep up with this - I'd love to be back in my original "acceptable" range (138-142) (although I've been hanging out at 143-144 for a couple of months - which is OK, but I'd love to get back into the range!)
QOTD: I'm also grateful for mobility. I used to dread having DH out-of-town because that meant I had to do all the cat things by myself. With six cats, there are a lot of food and water bowls to fill, lots of boxes to scoop - and all the bending and stooping and squatting and running up and down stairs was tough. No more! This has been a breeze!
I have an appt with one of the benefits people today to discuss my potential retirement next summer - so excited!!!
2 years 5 months out:
B: plain homemade Greek yogurt, homemade blackberry/blueberry sauce
S: coffee with half & half, pumpkin vanilla protein/Miralax latte shake
L: cottage cheese
D: either pulled pork or a chicken/apple/pecan salad
snack: I bought some quinoa/lentil chips on sale yesterday - may have a few with some hummus I forgot I had in my fridge. Or else I'll have some pumpkin yogurt with bran cereal

I know - it's a constant struggle. I have to be really conscious of eating extra protein, extra healthy fats, extra fiber - and still it doesn't always work. I've been putting a tablespoon or two of avocado in my protein shakes (although your MCT oil should have the same effect), and I've been getting Trader Joe's High Fiber Cereal lately. A couple tablespoons of that in my yogurt sometimes helps - and occasionally on an "eating night" I'll have a bowl of the cereal with unsweetened cashew milk (80 calories for 2/3 C - sometimes I add a little stevia since the cereal by itself doesn't have much taste). It does help somewhat - particularly if the hunger is real - but if it's all in my head, then it doesn't always.
